What does your role bring to the table?

The Vice President of Culinary plays a pivotal leadership role within Snooze and the Operations team. As the primary culinary authority, this position oversees the inspiration of Snooze chefs, drives creative menu development, ensures efficient Heart of House (HOH) operations, and positions Snooze as a culinary leader in the industry. Adaptability to the evolving needs of a rapidly growing business, coupled with the application of culinary and operational expertise to the Snooze landscape is crucial to success in this role. Collaboration across diverse teams, particularly with chefs and the menu innovation team, is essential. This role, reporting to the Chief Operating Officer, demands strategic thinking and an entrepreneurial mindset to achieve objectives with limited resources. Ultimately, the VP of Culinary will play a key role in creating an iconic breakfast experience.

 

The Position specifics!

Taking on the role of Vice President of Culinary isn’t just about bacon and pancakes. The responsibilities of this position include:

  • Having a passion for and demonstrated experience in identifying culinary food trends, articulating those trends, and having them manifest through ideation and recipe development.
  • Possessing experience with seeing ever-changing food trends and applying them to the breakfast landscape.
  • Directs every facet of kitchen operations and manages cross-functional relationships with supporting departments.
  • Maintaining the ability to decipher strategic priorities, and broader consumer needs impacting culinary trends, direction, and innovation.
  • Extensive collaboration with the marketing team to craft cutting-edge menus, Limited Time Offers (LTOs), capture industry trends, and drive innovation within specific market segments.
  • Leading well-defined recipe development, writing recipes, culinary techniques, allergen protocols, and safety tips to ensure consistency.
  • Leading the menu rollout process across all restaurants (67 and growing) which includes training, mentoring, leading, seeking feedback, and creating collaboration with Head Chefs and General Managers to ensure best-in-class culinary execution.
  • Collaborating with Purchasing Team to ensure all ingredients meet Snooze Approved standards and have viable distribution paths that meet sourcing and sustainability standards.
  • Ensuring a balanced approach of culinary creativity with operational efficiency with each new dish created.  
  • Identify procurement ingredient opportunities, ingredient cross-utilization, and menu recipe optimization.
  • Understanding, managing, and executing all aspects of recipe food costing, plating guidelines, and recipe standards.
  • Partnering with Team TLC (Training) to ensure training materials, rollout timelines, Snoozer knowledge testing, and all other aspects of the menu rollout meet the needs of our restaurant managers and Snoozers.
  • Working one on one with Regional Managers, General Managers, and Head Chefs to ensure restaurants are executing at the highest level of HOH Operations including food quality, ingredient quality, ticket times, recipe adherence, HAACP standards, facility organization and cleanliness.
  • Evaluating current kitchen design, equipment packages, and HOH kitchen layouts to ensure Snooze delivers an unmatched breakfast experience.
  • Lead Development Team in Heart of the House updates and innovation around equipment, layout and flow.
  • Direct IT team on KMS implementation and optimization.
  • Being responsible for all HOH costs and budgeting including NRO Equipment and E&S packages.
  • Doing a full analysis of previous years results and identifying any opportunity to mitigate waste while elevating efficiencies and productivity and partnering with Purchasing Team to ensure Snooze is receiving the highest quality of ingredients while procuring the best pricing.
  • Leading, managing, guiding, inspiring, developing and managing work flows of the research and development team (R&D) and Culinary Operations Team.  
  • Leading, managing, guiding, inspiring, developing and managing work flows of in-restaurant Executive Head Chefs (multi-unit Head Chefs) and creating developmental programs for our HOH operators to elevate their culinary, operational execution, and financial skillset. *Additional team members added with growth
  • Leading and building a strong HOH culture that is consistently working towards bringing out the best in our Snoozers and Guests, all while serving breakfast with a twist.
  • Developing and communicating a strategic vision for the department as the company grows
  • Spearheading other tasks and duties as assigned to meet Snooze’s business and operational needs

Let’s talk prerequisites! (Education, credentials, and experience)

  • Must be authorized to work in the United States
  • 10+ years culinary experience working within a variety of disciplines (previous breakfast experience is a plus)
  • 6+ years working in a leadership position (with multiple direct reports) specific to kitchen operations
  • 2+ years working at a VP level or higher within kitchen operations and menu development.
  • Culinary educational degree or certifications proving knowledge of basic culinary acumen, concepts, and techniques preferred

  • Must have the stamina to work 50-55 hours per week
  • The travel required for this position is approximately 25% and you must be able to travel for up to 5 days at one time (air, car, bus. Train, and weekend travel all required)
  • Home base is in Denver, CO at the Snooze Mothership
