The post holder will be responsible for all aspects of meat preparation, including the butchering and cutting of various types of meat, the cleaning, sanitation, and maintenance of equipment, as well as keeping a clean and sanitary workspace. The Butcher will also be responsible for maintaining the correct inventory level, working closely with other butchers to ensure that needed products are available for sale.
JOB RESPONSIBILITIES
Performing butchering and breaking down carcasses into primary and secondary cuts
Processing meat using knives, cleavers, saws, and other equipment.
Preparing cuts for weighing, packing, and sale or further processing
Preparing meat-based products and meat derivatives
Displaying cuts at the meat counter and selling cuts to the general public
Ensuring work areas are clean and compliant with all food safety and hygiene standards.
Stocking the freezer.
Assisting with other duties relating to the business as required.
Ensure relevant records and paperwork are completed on time.
Meet or exceed individual and departmental targets.
Wear appropriate safety protection at all times.
PERSON SPECIFICATION
Be skilled in the usage of butchering tools and equipment.
Be skilled in the proper cutting and packaging of a variety of meats.
Have knowledge of laws regarding meat sales and storage.

Good understanding of basic Health & Safety procedures
