Job Summary:

STK Steakhouse, part of The ONE Group, is seeking a highly skilled and experienced Executive Sous Chef to join our dynamic team. The Executive Sous Chef will assist in managing the overall kitchen operations, ensuring exceptional quality and service standards. This role requires strong leadership skills, a passion for culinary excellence, and a commitment to fostering a safe and inclusive work environment.

Key Responsibilities:

  • Assist the Executive Chef in overseeing daily kitchen operations, ensuring that food is prepared to the highest standards of quality, presentation, and flavor.
  • Supervise and train kitchen staff, fostering a culture of continuous learning and development.
  • Maintain compliance with all health, safety, and food handling regulations, including those required by California law (e.g., sanitation and safe food storage practices).
  • Collaborate with the Executive Chef on menu planning, development, and seasonal adjustments, ensuring creativity and adherence to the STK brand.
  • Monitor inventory levels and manage food cost, waste reduction, and portion control.
  • Support in scheduling staff, managing labor costs, and ensuring adequate coverage while complying with California’s wage and hour laws.
  • Lead by example to promote a positive work environment, respectful communication, and teamwork.
  • Manage relationships with suppliers, ensuring the quality and timely delivery of ingredients.
  • Ensure compliance with all company policies, including workplace safety, harassment prevention, and equal employment opportunity.
  • Act as the Executive Chef in their absence, managing the kitchen and ensuring smooth operations.

Qualifications:

  • A minimum of 5 years of culinary experience in a high-volume, upscale restaurant environment, with at least 2 years in a leadership or management role.
  • Comprehensive understanding of various cooking techniques and cuisines, with a strong emphasis on steak and seafood.
  • Ability to manage multiple priorities and work under pressure in a fast-paced environment.
  • Familiarity with California labor laws, including meal and rest breaks, minimum wage, and overtime regulations.
  • Food Safety Manager Certification or equivalent, as required by California law.
  • Excellent communication, problem-solving, and organizational skills.
  • Passion for culinary excellence and a commitment to delivering an exceptional guest experience.
  • Bilingual in English and Spanish is a plus but not required.

Physical Requirements:

  • Must be able to work in a kitchen environment, which may include exposure to extreme heat, steam, and cold.
  • Ability to stand, walk, and remain on feet for extended periods.
  • Capable of lifting up to 50 pounds as needed.
