SUMI is entering an exciting new chapter with the opening of our second restaurant in the heart of Marylebone in November 2026. Created by renowned sushi master Endo Kazutoshi and part of Creative Restaurant Group, SUMI has earned a reputation for delivering exceptional Japanese cuisine inspired by authentic traditions, expert craftsmanship and genuine hospitality.

Following the success of our Notting Hill neighbourhood restaurant, SUMI Marylebone will be a gem in one of London's most exciting dining destinations showcasing the finest seasonal ingredients, the best sushi preparation and warm, welcoming service. We're looking for talented individuals to join our founding team from day one, help us bring this exceptional restaurant to life, and grow with us as we establish a new benchmark for Japanese dining in London.

The Role

As our Head Kitchen Porter, you will lead and oversee all back-of-house cleaning, hygiene, and support operations, ensuring the kitchen runs smoothly, efficiently and to the highest standards. You will manage a Kitchen Porter team, establish cleaning schedules, train and develop your team, and take pride in maintaining an organised, hygienic and safe kitchen environment that enables our chefs to deliver exceptional service. What You'll Be Doing

  • Leading, managing and supervising the Kitchen Porter team, organising daily duties and ensuring all areas are covered according to business needs
  • Establishing and maintaining comprehensive cleaning schedules for daily, weekly and periodic tasks, ensuring all work is completed on time to company standards
  • Maintaining the highest standards of cleanliness and hygiene across the kitchen, wash-up areas, storage areas, staff areas and back-of-house facilities
  • Ensuring all kitchen equipment, utensils, crockery, glassware and smallwares are cleaned, maintained and available for service throughout operations
  • Training new and existing Kitchen Porters on cleaning procedures, equipment operation, hygiene standards, waste management and safe working practices
  • Conducting regular checks of all kitchen areas, identifying issues and taking immediate corrective action where required
  • Managing cleaning chemicals and COSHH compliance, monitoring correct dilution, storage and safe handling at all times
  • Supporting waste management procedures, including recycling, food waste separation and general waste disposal
  • Maintaining accurate records of cleaning schedules, equipment checks and operational compliance documentation
  • Supporting deliveries, goods receiving and stock organisation, ensuring storage areas remain clean, organised and hazard-free
  • Conducting inspections of dishwashing equipment, glasswashers and pot wash areas, reporting faults immediately to management
  • Supporting opening and closing procedures, ensuring all areas are prepared before service and thoroughly cleaned afterwards
  • Promoting teamwork, professionalism and accountability within the Kitchen Porter team
  • Attending daily briefings and kitchen meetings, providing feedback and suggestions to improve efficiency and standards

What We're Looking For

  • Proven experience as a Head Kitchen Porter, Kitchen Porter or equivalent supervisory role in a busy kitchen environment
  • Strong leadership ability with experience training, coaching and managing kitchen teams
  • Excellent knowledge of cleaning procedures, food hygiene standards, COSHH regulations and health and safety requirements
  • Meticulous attention to detail and commitment to maintaining the highest standards of cleanliness and organisation
  • A proactive, hands-on approach and willingness to support the team during busy service periods
  • Strong organisational and time management skills with the ability to prioritise multiple tasks
  • Ability to stay calm and efficient under pressure while maintaining high standards
  • Excellent communication skills and a collaborative, professional approach with all team members
  • A positive attitude and genuine commitment to supporting the kitchen operation
  • Flexibility to work evenings, weekends and bank holidays as required

Salary: Up to £15.51 including service charge, plus benefits
