Assistant Restaurant Manager - New Opening, SUMI Marylebone

SUMI is entering an exciting new chapter with the opening of our second restaurant in the heart of Marylebone in November 2026. Created by renowned sushi master Endo Kazutoshi and part of Creative Restaurant Group, SUMI has earned a reputation for delivering exceptional Japanese cuisine inspired by authentic traditions, expert craftsmanship and genuine hospitality.

Following the success of our Notting Hill neighbourhood restaurant, SUMI Marylebone will be a gem in one of London's most exciting dining destinations showcasing the finest seasonal ingredients, the best sushi preparation and warm, welcoming service. We're looking for talented individuals to join our founding team from day one, help us bring this exceptional restaurant to life, and grow with us as we establish a new benchmark for Japanese dining in London.

The Role

As Assistant Restaurant Manager, you will support the General Manager and Restaurant Managers to deliver exceptional service and drive the day-to-day operations of the restaurant. Working closely with the management team, you'll have hands-on responsibility for guest experience, supporting team development, assisting with training programmes and ensuring every service runs smoothly.

You'll lead from the floor, work alongside the Restaurant Managers to manage the wider team, support training initiatives, and contribute to maintaining our high service standards. This is an excellent opportunity to develop your management skills and grow into a Restaurant Manager role as you progress with Creative Restaurant Group.

What You'll Be Doing

  • Supporting the management team in leading the front-of-house during service
  • Delivering exceptional, knowledgeable service and leading by example
  • Assisting with training programmes and supporting team member development
  • Supporting the Restaurant Managers with day-to-day operational tasks
  • Contributing to opening and closing procedures and ensuring standards are maintained
  • Assisting with guest relations and handling feedback, complaints and special requests
  • Supporting stock takes, ordering and inventory management
  • Monitoring service quality and guest satisfaction throughout each service
  • Supporting revenue opportunities and contributing to sales targets
  • Working with the Restaurant Managers on rostering and scheduling support
  • Maintaining accurate records and clear communication with the management team
  • Coordinating with the kitchen team to ensure seamless service
  • Supporting staff development initiatives and team engagement activities

What We're Looking For

We are looking for an experienced hospitality professional with strong supervisory skills, operational knowledge and genuine passion for delivering exceptional guest experiences.

You will need:

  • Proven experience as a Restaurant Supervisor, senior front-of-house role or similar hospitality leadership position
  • Strong food, drinks and service knowledge
  • Excellent communication and interpersonal skills
  • Experience supporting team management and training
  • Strong attention to detail and commitment to high standards
  • Experience in fine dining or upmarket hospitality environments
  • The ability to remain calm and make confident decisions during busy services
  • A hands-on, positive and team-focused approach
  • Proficiency with EPOS systems and restaurant management tools
  • Problem-solving skills and the ability to work collaboratively
  • Flexibility to work evenings, weekends and bank holidays

Salary: Up to £44,000 p/a including service charge, plus benefits
