SUMI is an extension of Endo Kazutoshi’s culinary journey, inspired by Japanese traditions, craftsmanship, and the people who shaped his career. Under the leadership of Executive Chef Christian Onia, the kitchen brings Endo’s signature style to life, while the front-of-house team delivers service that is thoughtful, confident, and deeply human.


The Role

We are looking for an Assistant General Manager who leads by example, puts people first, and plays a pivotal role in supporting the General Manager and the wider team.

This role is ideal for a hospitality leader who is passionate about developing others, creating strong team culture, and driving the business forward through engaged, motivated people. You will be a trusted partner to the General Manager, fully invested in the success of both the team and the restaurant.

Who We’re Looking For

You are someone who:

  • Has previous experience as an Assistant General Manager or strong Deputy/Restaurant Manager in hospitality environment

  • Leads through people, culture, and example — not hierarchy

  • Is fully supportive of the General Manager and acts as a true partner in leadership

  • Is passionate about coaching, developing, and inspiring teams

  • Thrives in a fast-paced, detail-driven environment while remaining calm and approachable

  • Has excellent communication skills and emotional intelligence

  • Takes pride in standards, service, and creating memorable guest experiences

  • Is commercially aware and understands how great people drive great performance


Key Responsibilities
  • Support the General Manager in the day-to-day running of the restaurant

  • Lead, motivate, and develop the front-of-house team, fostering a positive and high-performing culture

  • Act as a role model on the floor, delivering exceptional hospitality and guest engagement

  • Ensure service standards, brand values, and operational procedures are consistently upheld

  • Support recruitment, onboarding, training, and performance development

  • Assist with rota planning, cost control, and business optimisation

  • Build strong relationships across departments to ensure seamless service

  • Step into the General Manager role when required, ensuring continuity and confidence
