Description

Restaurant Manager

Location: SUMI, Notting Hill, London

About Us

SUMI is a much-loved sushi and Japanese restaurant in the heart of Notting Hill, London. The little sister to Endo at the Rotunda, led by sushi master Endo Kazutoshi, SUMI brings Japanese culinary excellence into a warm, elegant, and welcoming neighbourhood setting.

Named after Endo’s mother, SUMI is a place of refinement, hospitality, and heartfelt service — where locals and visitors come together to enjoy exceptional food and genuine connection.

The Role

We are looking for a Restaurant Manager who leads with presence, care, and clarity. This is a hands-on leadership role for someone who is passionate about people, service, and creating an environment where both guests and team members thrive.

You will take ownership of the daily operation, ensuring that every detail reflects our standards, while building a strong, motivated, and engaged team. Working closely with the General Manager, you will play a key role in driving performance, culture, and consistency.

What You’ll Receive

  • Shared service charge
  • Delicious and wholesome team meals
  • 50% discount on food and beverages across all our restaurants
  • Tailored training and development opportunities
  • A day off on your birthday
  • Annual Christmas party
  • Referral bonus scheme
  • Wagestream
  • 28 days paid annual leave
  • A workplace culture that champions growth, excellence, and leadership through care

Who We’re Looking For

You are someone who:

  • Has experience as a Restaurant Manager or a strong Assistant General Manager ready to step up
  • Leads through people, culture, and example — not hierarchy
  • Is confident, present, and leads from the floor
  • Is passionate about coaching, developing, and inspiring teams
  • Thrives in a fast-paced, detail-driven environment while remaining calm and approachable
  • Has excellent communication skills and emotional intelligence
  • Takes pride in delivering exceptional guest experiences
  • Is commercially aware and understands how people drive performance

Key Responsibilities

  • Lead the day-to-day restaurant operation with confidence and consistency
  • Drive a positive, high-performing team culture
  • Be highly present on the floor, delivering and elevating guest experience
  • Ensure service standards and brand values are upheld at all times
  • Lead recruitment, onboarding, training, and team development
  • Manage rotas, labour cost, and operational efficiency
  • Work closely with the kitchen and senior leadership to ensure seamless service
  • Support business performance through strong leadership and attention to detail
