Role and Context
§ You will be a key Member of the leadership team who contributes to the overall success and culture of the business.
§ Inspires the Exec chef and development team plus wider chef team to create nutritious menus both healthy, seasonal and local whenever possible.
§ Ensuring and overseeing all legal requirements incl allergens, nutritional, calorie and Natasha Law procedures are realized and delivered across the company.
§ Creating and delivering a learning platform for both customers and employees to improve nutritional knowledge.
§ Supports the Exec chef teams to produce fundamentally fabulous food for all occasions by showcasing and improving nutritional menu management and knowledge improvement.
§ Be part of the creative team when new recipe and concept ideas are being developed to guide both the nutritional and balance aspect of the content.
Oversee policy development in regards to the healthy eating strategy. Coordinate adherence through to marketing, social media, purchasing and recipe development§ Support in evaluating food strategies that meet future nutritional requirements enabling sales and contract growth for the company.
§ Recipe analysis on all company owned/licensed platforms to detail both macro and micro nutrient content and to make recommendations and adjustments.
§ Recommend creative food propositions that captures the client’s imaginations and wishes for food offers that are specific and relevant to the client base and complete full nutritional analysis where required.
§ Monitor the chef recipe system to ensure accuracy and correct labelling applied and uploading and creating new nutritional concepts.
§ Ensures any menu/marketing/statements comply with legal parameters with particular areas as any health claims or good for you statements.
§ Keep abreast of all nutritional legislation and continue relevant membership of nutritional bodies and communicate where necessary.
§ Ensures recognition, reward and achievement are communicated for all Chefs/teams in conjunction with Operations and Human Resources.
§ Cascade timely information via internal electronic platforms to all company team “bite size” information to improves nutrition knowledge and benefit
§ Deliver workshops/training to promote nutritional knowledge.§ Proven track record of successful menu compilation in comparable sector or size organisation
§ Desirable: Contract or Catering experience
Skills/Knowledge
§ Bachelor of Science in Nutrition or equivalent for minimum of 5 years
§ Food Safety Level 2 minimum
§ Health and Safety Level 2 minimum
§ Confident ITQ skills including Excel/Powerpoint and Outlook
§ Strong Client facing presentation skills and able to deliver high level individual and group discussions in both a sales and client/customer environment
§ Committed to developing trade skills
§ Analytical and confident in preparing and presenting recommendations and reviews
