Key Responsibilities:

  • Lead and support the Sommelier Team, fostering a positive, professional culture.
  • Deliver prompt, knowledgeable wine and sake service with expert pairing guidance.
  • Maintain impeccable product knowledge and uphold service standards, presentation, and guest care.
  • Oversee wine operations: cellar management, bin‑end updates, vintage changes, correct glassware, and service accuracy.
  • Ensure smooth daily service, assisting the restaurant team as needed.
  • Protect stock, manage requisitions, monitor waste, and maximise sales opportunities.

Your Requirements:

As a Head Sommelier we would love you to have:

  • Previous Head Sommelier (or Assistant Head Sommelier) experience, with knowledge of wine and beverages
  • Experience working in a similar fast-paced environment
  • The ability to lead a team of Junior Sommeliers
  • Customer focus - demonstrating exceptional guest service
  • Excellent communication skills - both verbal and written
  • A willingness to learn and grow within the business
  • The ability to maintain and set processes and standards
