The Back Server is a vital role for creating exceptional guest experiences. Back Waiters help the Server/Model make sure every detail is taken care of. The primary objective of the Back Waiter is to be the primary table assistant for their assigned server or section. Back Server clear dirty flatware and glasses, assist with guest communication, and anticipate the needs of the guest to make sure the guest experience is seamless and exceptional. The Back Server maintains a clean, professional appearance.

Primary Responsibilities

  • Execution of water service, pouring, refilling, maintaining water levels

  • Ensure table is always free of foreign objects, trash, unused plates and glassware

  • Ensure table is always prepared for upcoming course silverware, plates, linen, etc

  • Ensure table is properly wiped down and reset between courses

  • The delivery of beverages from off of the service bar to guests in their sections

  • All guests requests are attended to and communicated properly from guest to server to kitchen to manager

  • Assist Server with greeting tables when applicable

  • On-going table maintenance

  • Clearing and resetting of table in timely manner immediately after guests depart

  • Spot checks, under tables, on floor , on booths and chairs of entire section for trash debris and gum

  • Clean up of any and all spills in sections

  • Stock and upkeep of side stations

  • Always smiling and actively engaged on the floor 

 

Secondary Responsibilities...

  • Proactively suggest additional cocktails from guests and relay with Server to execute

  • Relay additional food orders from guests to Servers

  • In the event guests get up from tables napkins are refolded and placed nicely on table.

 

How this works on the floor...

  • Report directly to Server

  • Does not deviate from assigned section/Server

  • Follows Server/Waiter all night – either back waiter or front waiter/Server must remain in section at ALL times

  • Requests printed ticket from front Server/Waiter for each table in order to know what items are coming to the table

  • Runs all drinks for Server

  • Provides water service for all tables in section

  • Clears and re-marks tables doing multiple courses

  • Maintains highest level of table maintenance throughout shift

  • You are side by side with front Server for the duration of the shift, only time spent apart is running drinks, taking items back to the kitchen, refilling water pitcher
