OUR HOTEL 

Located within The Edinburgh Grand, Lady Libertine is a stylish, two-level cocktail bar and restaurant with a bold personality. The concept includes a relaxed café and wine bar at street level, and a vibrant, design-led cocktail bar in the basement featuring a mezzanine and a private “Vault” function room. The venue offers all-day dining, seasonally inspired sharing plates, and an energetic drinks and entertainment programme, with live DJs and events on weekends.

A DAY IN THE LIFE OF AN ASSISTANT GENERAL MANAGER AT LADY LIBERTINE

What you'll be doing...

  • Be the General Manager's second in command, taking a leading role in the day-to-day operation and ensuring Lady Libertine consistently delivers an exceptional guest experience.
  • Lead from the front with a strong and visible presence on the floor, particularly during busy service periods, actively engaging with guests and supporting the team.
  • Take ownership of the guest experience across both floors, monitoring service flow, atmosphere, guest interaction and operational standards throughout the day.
  • Build strong relationships with our guests, including regulars, and identify opportunities to personalise their experience and make every visit memorable.
  • Lead service recovery and resolve guest concerns professionally, confidently and efficiently.
  • Ensure every service is properly prepared, staffed and organised, leading opening, closing and handover procedures.
  • Coordinate the bar, floor and kitchen teams to ensure a seamless operation and consistently high standards of service.
  • Lead, coach and develop the Front of House team, setting clear expectations around service, behaviour, presentation, professionalism and guest interaction.
  • Support recruitment, onboarding, probation reviews, performance management and regular coaching conversations.
  • Identify skills and development opportunities within the team and deliver engaging training around hospitality, service standards, product knowledge, upselling and guest interaction.
  • Work closely with the Bar Manager and Assistant Bar Manager to ensure teams are confident, knowledgeable and able to deliver an outstanding drinks experience.
  • Support the delivery of the venue's commercial objectives by monitoring sales, guest spend and operational performance.
  • Drive appropriate upselling and suggestive selling, helping the team maximise revenue while always protecting the guest experience.
  • Support effective labour and payroll management, ensuring staffing levels are appropriate to business demand.
  • Maintain a strong understanding of reservations and guest flow, ensuring enquiries, VIP requirements, special occasions and guest preferences are communicated and delivered effectively.
  • Work closely with Sales and Events teams to support bookings, private functions, events and activations.
  • Take ownership of day-to-day operational compliance, ensuring licensing, Health & Safety, hygiene and operational checks are completed and followed up.
  • Work collaboratively with Kitchen, Front Office, Events, Sales, Housekeeping, Security and Maintenance teams to ensure smooth operational delivery.
  • Step up to take full operational responsibility for Lady Libertine in the General Manager's absence.

WHAT WE NEED FROM YOU

  • Previous experience in a senior management or leadership role within a busy bar, restaurant, hotel or high-volume hospitality environment.
  • A genuine passion for hospitality and delivering exceptional guest experiences.
  • A highly visible and hands-on leadership style – you enjoy being on the floor, engaging with guests and supporting your team through service.
  • Strong leadership and coaching skills, with the ability to motivate, develop and hold people accountable.
  • Excellent communication and interpersonal skills, with confidence building relationships with guests, colleagues and senior stakeholders.
  • A strong understanding of food and beverage operations, service standards and guest flow.
  • Commercial awareness, with experience supporting sales, labour management, payroll and operational performance.
  • The ability to remain calm, decisive and solutions-focused in a fast-paced environment.
  • Excellent organisational skills and strong attention to detail.
  • Confidence managing guest complaints and leading service recovery.
  • A proactive approach to problem solving and the confidence to challenge standards where required.
  • Experience with reservations systems, rota management and operational reporting would be advantageous.
  • The ability to translate strategy and commercial objectives into practical action and consistent daily execution.

This is not an office-based management role. As our Assistant General Manager, you will spend the majority of your time actively leading on the floor, engaging with guests and supporting your team.

The role requires a flexible working schedule, including evenings, weekends and public holidays, in line with the operational needs of the business. You will be expected to maintain a strong onsite presence during key operating and peak service periods.
