The George Hotel on Colchester High Street, is seeking a second Head Chef who thrives in a changing environment to bring a wealth of knowledge, skills and experience to complement our team.

Restored to its former glory, The George Hotel has proudly sat on Colchester High Street in Essex, close to the City’s Castle, for over 500 years, it really is one of a kind! 

Guests enjoy cocktails, local draught lagers and ales and an extensive wine list from the contemporary bar. Dine in the relaxed two-tiered restaurant that offers a daily a la carte menu inspired by British and worldwide cuisines, using locally sourced and seasonal produce. Lighter lunches can be taken on the Moroccan style Courtyard area, or quintessential English Afternoon Tea in the Victorian Themed ‘T-at The George’ Tea room- there’s something to suit all tastes at The George 

Our Head Chef should have demonstrable flare; inventive and creative in designing menus that are innovative and cost effective, but most importantly are enticing to our guests! You lead with your passion, developing your brigade to take the kitchen forwards;

Head Chef duties:

• Responsible for all operational aspects of the Kitchen and its success.
• Ensuring dishes are prepared and delivered to spec, in time efficient manner
• To support the General Manager and fellow Head Che with the management of the Kitchen Division including controlling budget, cost of goods, rota planning and performance management.
• Manage the day to day food systems compliance.
• Ordering stocks, taking deliveries of produce and stock rotation of food stuffs, auditing equipment and standards.
• Maintain a professional kitchen, with a positive attitude and proud workforce
• Delegate, lead, coach and manage your Team appropriately.
• Control costs through correct stock ordering and minimising wastage, forecasting and managing workload.
• Ensure the Company Health and Safety, Food Safety and COSHH legislations are adhered to; including actioning and delivering appropriate coaching and training.

Key Requirements of our Head Chef Role:

• Outstanding cooking skills
• Proven skills efficiently running the pass with a high volume of covers on busy shifts
• Excellent communication skills- you're inspiring and creative!
• Evidence of managing a Team within a Catering / Hotel environment.
• Superb Customer Service skills.
• The ability to write menus that are both creative, costed and profitable.
• A cooking qualification such as Diploma, NVQ or SVQ at Level 3 or equivalent
