At The Granary, we are all about beautiful food, a stunning environment, and engagingly delivered experiences. Our guests step into our historic space, originally built in 1869 as a grain store and indulge in a relaxed and honest dining experience. We are open 7 days a week for breakfast, brunch, lunch and through to dinner and late-night cocktails.

We believe in using only the very best, seasonal ingredients that have been well sourced from our producers and our suppliers in the South-West of England. Embracing the concept of sharing, our generous, seasonal plates are meant to be enjoyed among friends and family. Our passion for fiercely seasonal dishes shines through in every bite, as we use fundamental processes of wood roasting, charring, and slow cooking to create a relaxed and timeless dining experience.

We are looking for a Senior Sous Chef who can make an impact in helping to run our open plan, theatre style kitchen, cooking with fire on our chargrill and rotating wood-fired oven.

Role Overview

As Senior Sous Chef, you’ll be the Group Head Chef’s right hand, helping to lead the kitchen day to day and keep service organised, consistent and calm.

You’ll support the team across prep, service, events and menu development, bringing energy, discipline and ideas to the kitchen. This is a hands-on role for someone who enjoys leading from the pass, developing junior chefs and working with seasonal produce in a fire-led kitchen.

You’ll also help support The Granary’s growing events offer, including private dining, corporate venue hire, large celebrations, supper clubs and supplier collaborations.

Key Responsibilities

• Support the Group Head Chef in the day-to-day running of the kitchen.
• Lead service confidently
• Maintain consistency across prep, cooking, plating and presentation.
• Support the delivery of The Granary’s fire-led restaurant menu.
• Help train, motivate and develop junior chefs and kitchen team members.
• Support ordering, stock control, prep levels and waste reduction.
• Contribute ideas for seasonal dishes, specials, events and supper clubs.
• Help deliver event menus for private hires, corporate venue hire, large celebrations and larger group dining.
• Support kitchen organisation, section management, rotas and daily prep planning.
• Keep communication strong between kitchen, front of house and events teams.
• Maintain high standards of food safety, hygiene, HACCP and kitchen discipline.
• Help create a positive, calm and professional kitchen culture.

What We’re Looking For

• Proven experience as a Head Chef or strong Sous Chef in a quality, busy restaurant environment.
• Confidence leading service and supporting a kitchen brigade.
• A passion for seasonal produce, local ingredients and generous, flavour-led cooking.
• Experience or interest in cooking over fire, wood or charcoal.
• Good understanding of stock control, ordering, prep levels and waste.
• Ability to train, support and motivate junior chefs.
• Strong organisational skills and attention to detail.
• Calm and focused under pressure.
• A team-first attitude and strong communication style.
• Interest in events, supper clubs, supplier collaborations and creative dining experiences.
• Good knowledge of food safety, hygiene and HACCP standards.

 

Technical skills aside, you will need to bleed hospitality, have a genuine love of food and have a curious mind. Your energy for cooking, ingredients and restaurants will need to be infectious that in turn will ensure the team both kitchen and front of house are inspired by your enthusiasm.
