F&B Manager Job Description

As the F&B Manager of The Harper, a Michelin Key award-winning hotel, you'll be part of a close-knit, passionate team where ideas are welcomed, and individuality is celebrated. With the support of our brilliant central operations team, you'll have the freedom to shape our food and drink offering. Your initial focus will be on bringing fresh energy and consistency to our F&B service across The Harper and our pub, The Langham Blue Bell.

You'll be working alongside Executive Chef Jack Gosling, whose culinary journey has taken him from local Norfolk establishments to the two Michelin-starred Spectrum in Amsterdam. Jack brings a unique perspective that blends his deep local roots with world-class international experience, championing an approach to cooking that celebrates Norfolk's incredible seasonal bounty. His collaborative leadership style and commitment to building tight-knit kitchen teams creates an environment where culinary excellence and creativity flourish.

What you’ll be doing:

General Operational Duties

  • Oversee the day-to-day operation of F&B at The Harper and The Langham Blue Bell, maintaining consistently high standards across both venues.
  • Work alongside Executive Chef Jack Gosling, Hotel Management and Senior Leadership to develop an effective food and beverage strategy that works seamlessly across our businesses
  • Manage and maintain stock control systems, developing improved processes to ensure full oversight across all F&B operations, in collaboration with the management team.
  • Ensure appropriate staffing levels and control payroll through smart scheduling and operational efficiencies
  • Partner with our Training & Development Manager to ensure all F&B team members receive comprehensive induction and compliance training, with ongoing development plans that keep everyone engaged and growing in their roles.
  • Monitor, review and refresh wine menus across both properties, ensuring guests always have interesting and appealing choices.
  • Work closely with our Head of Operations to ensure F&B operations consistently meet food safety, health & safety, licensing laws and procedural requirements at all times.
  • Oversee ordering, stock control and waste management across all F&B departments

 Team Management

  • Recruit and onboard new team members in partnership with HR and senior leadership
  • Identify training and personal development opportunities for front-of-house staff
  • Lead, coach and inspire the entire front-of-house team
  • Set the standard and ensure the team consistently delivers exceptional, guest-focused service
  • Create effective schedules that optimise service levels and team satisfaction
  • Conduct regular briefings and feedback sessions to maintain high performance and motivation

Service Standards & Product Quality Control

  • Develop and maintain service standards that reflect The Harper's guest promise and exceed expectations
  • Foster a genuinely guest-focused culture throughout the team
  • Anticipate guest needs and consistently deliver experiences that go beyond expectations
  • Provide Senior Management with innovative ideas for enhancing service quality
  • Ensure all front-of-house team understand and deliver The Harper's distinctive service culture
  • Utilise our eLearning platform for ongoing compliance and product knowledge training
  • Monitor product quality and consistency across all offerings
