Junior General Manager – The Last Talisman
This is not a role for someone who simply runs shifts - this is for someone who wants to run a business. Someone who takes ownership, drives performance, and is ready to step up into a General Manager position.
The Breakfast Group has been at the forefront of London’s hospitality scene since 1991, creating some of the city’s most vibrant and design-led bars and restaurants. The Last Talisman is a premium pub on Bermondsey Street, offering a high-quality British food and drink experience with a distinctive Asian twist, set in one of London’s most exciting hidden gem locations. It is a standout venue where premium pub culture, high-energy service, and immersive dining come together. It’s ambitious, fast-paced, and built for people who care about doing things properly.
As Junior General Manager, you will work directly alongside the Multi-Site General Manager, gaining exposure tosite operation and senior-level decision making, while taking full responsibility for the venue’s day-to-day performance. You will lead from the front, own the numbers, develop the team, and play a key role in shaping the future of the business.
What you’ll be doing:
- Owning daily operations across FOH & BOH, ensuring consistently high standards
- Driving team performance, culture, and engagement
- Working closely with the Head Chef on menu development and product quality
- Partnering with the Sales Manager to grow events, bookings, and revenue
- Taking full responsibility for stock, GP, and wage control
- Leading from the floor - hands-on, visible, and decisive during service
- Creating and executing promotions, activations, and marketing ideas
- Acting as a true ambassador and face of the business
- Contributing to business strategy, growth, and long-term direction
What we’re looking for:
- Experience in a high-volume, premium bar, pub or restaurant environment
- Strong commercial awareness with the ability to drive revenue and control costs
- A natural leader who builds, develops, and inspires high-performing teams
- Someone ambitious and career-driven, ready for the next step
- Confidence across service, events, and sales-led environments
- A creative and proactive mindset with real input into ideas and execution
- Strong knowledge of UK licensing, H&S, and food safety
- Personal Licence holder (preferred)
- Calm under pressure, detail-focused, and solutions-driven
We particularly welcome applications from Senior Assistant General Managers and General Managers of smaller sites who are ready to step into a bigger, more commercially driven role.
Most importantly, this role is for someone who treats the venue like their own business.
What you’ll get:
- Competitive salary
- Share of service charge
- Clear pathway to General Manager Role
- Exposure to site leadership and business strategy
- Real input into menus, promotions, and concept development
- 50% staff discount across all Breakfast Group venues
- Free meals on shift
- Contract with a genuine focus on work-life balance
- Structured development plan with ongoing support
- Regular team incentives, socials, and recognition rewards
This role offers real autonomy, real accountability, and real opportunity. You’ll be supported, but you’ll also be trusted to make decisions, test ideas, and leave your mark on the business.
If you’re ready to move beyond managing and start leading a venue as your own, we want to hear from you. Apply now and be part of building something exceptional.
