Description

We are currently looking for an enthusiastic and dedicated Head Pastry Chef to join our Pastry Kitchen team at The Lodge at Ashford Castle.

Key responsibilities of the Head Pastry Chef will include:

• Ensuring Section stock levels are correct and where required requisitioned in accordance with SOP
• Ensuring mise en place requirements are planned, actioned and handed over in accordance with SOP
• Ensuring all food prepared is done in accordance with recipes an RCH standards
• Ensuring the section is set up and managed to maximise productivity and in accordance with Health and Safety and Statutory Hygiene practices and company guidelines
• Ensuring the section’s stock is cleaned, organised, labeled and rotated in accordance with SOP
• Communicating any challenges re. equipment, food and staff to the chef on duty as soon as it becomes known
• Training staff on an ongoing basis to ensure they are always up to standard with current menu recipes and standards
• Advising kitchen management of order requirements for section stock in accordance with business levels ensuring sufficient stock and no wastage
• Ensuring that fridge temperatures are monitored and reported daily

The ideal candidate for the Head Pastry Chef should:

• Have a professional culinary arts degree
• Have previous experience in a similar role within a 4 or 5 star hotel environment
• Possess good knowledge and practical Pastry chef skills
• Have proven experience and ability to manage all cost controls within the section e.g. food cost, labour etc.
• Be fluent in both written and spoken English
• Demonstrate passion for food and food production
• Have excellent communication skills
• Possess good organisational skills
• Be able to handle pressurised situations and busy periods
• Be flexible, innovative and adaptable

• Possess excellent people management skills and proven ability to lead a team.
