The Management team is responsible for the day-to-day running of the operations in the club, and spans across Food, Beverage, Events, Kitchen and Back-of-House operations.

ROLE OVERVIEW:

To further elevate and enhance our beverage programme, we are seeking an accomplished and innovative Mixologist to support the development, production, and execution of cocktail offerings across all bars within the club.

Working closely with the Head of Bars, Assistant Bars Manager, and wider operations team, the Mixologist will support cocktail menu development, batch production, event preparation, quality control, compliance, and staff training. This role requires a highly organised and creative professional with exceptional knowledge of mixology, spirits, production processes, and luxury hospitality standards.

The Mixologist will help maintain consistency, quality, and efficiency across all cocktail offerings while contributing innovative drinks and beverage concepts that align with the club's identity and member expectations.

The successful candidate will support the preparation and availability of cocktail batches, ingredients, garnishes, and pre-ordered beverages for daily operations and special events. They will also assist in ensuring all cocktail-related products, documentation, and labelling comply with relevant food safety, allergen, and licensing regulations.

Acting as a key support to the bar management team, the Mixologist will help drive cocktail excellence across the club through product development, training, operational support, and quality assurance.


RESPONSIBILITIES:

Cocktail Development

  • Support the creation and development of seasonal, signature, and event-specific cocktail menus.
  • Assist with recipe development and standardisation across all bars.
  • Research industry trends, products, and techniques to support menu innovation.
  • Provide feedback and recommendations based on cocktail performance and member preferences.

Batch Production & Quality Control

  • Coordinate the preparation of cocktail batches for all bars and events.
  • Ensure all batches are produced according to approved recipes and specifications.
  • Maintain quality standards for syrups, infusions, garnishes, and pre-batched cocktails.
  • Assist in planning production schedules to support daily operations and upcoming events.

Event Support

  • Work alongside the Events and Bar Management teams to review upcoming events and beverage requirements.
  • Ensure pre-ordered cocktails, drinks packages, and bespoke beverage requests are prepared and available.
  • Support the development of event-specific cocktails and beverage solutions.
  • Help maintain appropriate stock and production levels to meet event demand.

Inventory & Ordering Support

  • Assist with forecasting ingredient requirements based on business levels and event schedules.
  • Coordinate orders for cocktail production ingredients and materials.
  • Work closely with the Stock Controller and Bar Managers to maintain appropriate stock levels.
  • Support waste reduction and efficient stock utilisation.

Compliance & Documentation

  • Ensure all cocktail batches and bottled products are correctly labelled and compliant with legal requirements.
  • Maintain batch sheets, production records, allergen information, and traceability documentation.
  • Support compliance with food hygiene, HACCP, health and safety, and licensing regulations.

Training & Development

  • Support Bar Management team on training bartenders and barbacks on new cocktails, recipes, preparation techniques, and presentation standards.
  • Conduct tasting sessions and product education workshops alongside management.
  • Support the ongoing development of the bar team's cocktail knowledge and execution standards.
  • Assist Bar Managers in maintaining consistency across all venues.

REQUIREMENTS:

  • Proven experience in a senior mixology, beverage development, or cocktail programme management role.
  • Advanced knowledge of cocktail creation, batching techniques, spirits, flavour profiling, and beverage trends.
  • Experience managing large-scale cocktail production across multiple outlets or venues.
  • Strong understanding of inventory management, forecasting, and procurement processes.
  • Excellent knowledge of food safety, allergen management, labelling requirements, and licensing regulations.
  • Exceptional attention to detail and commitment to quality standards.
  • Passion for innovation and creating exceptional beverage experiences.

 

Desirable

  • WSET Spirits qualification or equivalent.
  • Food Safety and HACCP certification.
  • Experience within luxury hospitality, private members' clubs, five-star hotels, or premium cocktail venues.
  • Experience with cocktail batching, production kitchens, or centralised beverage programmes.
