We are seeking a passionate and hands-on Director of Bars to
lead our bar operations, ensuring the highest standards of service and guest
satisfaction. This senior leadership role is ideal for a hospitality

The Rubens at the Palace Hotel part of the Red Carnation Hotels, is a stunning five-star property located in the heart of London’s Victoria and within walking distance of Buckingham Palace. This wonderful hotel has been fully refurbished and features 161 individually designed bedrooms and suites, as well as a range of Food and Beverage outlets including The English Grill Restaurant, The Curry Room Restaurant, The New York Bar, The Palace Lounge and Champagne Bar, as well as 9 well equipped function rooms.
Key
Responsibilities:
- Lead, motivate, and manage the
bar teams to maximise operational efficiency and guest satisfaction.
- Ensure all F&B service is
delivered to the highest standards, in line with Red Carnation policies.
- Drive training, development, and
retention of bar staff through effective performance reviews and skills
training.
- Oversee beverage stock control,
monthly stock takes, and cost management.
- Develop and execute marketing
plans, staying on top of industry trends and menu innovation.
- Maintain compliance with health,
safety, licensing, and food safety regulations.
- Handle guest feedback,
complaints, and ensure corrective actions are implemented.
- Collaborate with other hotel
departments to maximise service opportunities and revenue.
- Prepare and publish team rotas,
ensuring coverage for business levels and special events.
- Maintain accurate records for
training, rotas, and departmental SOPs.
What are we looking for?
- Previous experience as a Bar
Manager.
- Superb food & beverage
knowledge.
- Highly organised, adaptable, able
to prioritise in a fast-paced environment.
- Enthusiastic, positive,
passionate, driven, team player, self-motivated, flexible.
- Experience in 5-star hotels.
