The Sicilian Butcher is a modern-casual, meatball and butchery-inspired concept created by visionary celebrity chef Joey Maggiore and the team behind Tomaso’s, Hash Kitchen, The Mexicano, and The Sicilian Baker. Known for its scratch-made pastas, craft meatballs, and Italian hospitality, The Sicilian Butcher also delivers an exceptional pastry program led by our Executive Pastry Chef.

With new locations opening in Texas and Tennessee, we’re looking for an Assistant Pastry Chef to help drive quality, consistency, and creativity across multiple restaurants in these fast-growing markets.

Requirements

  • 3+ years of experience in a high-volume pastry or bakery environment
  • Strong understanding of classic and modern pastry techniques
  • High attention to detail and consistency in plating and presentation
  • Excellent communication and time management skills
  • Flexible schedule with the ability to travel within the region
  • Ability to lead and train back-of-house pastry teams
  • Culinary degree or pastry certification preferred

A Day in The Life
As an Assistant Pastry Chef, you’ll partner closely with our Executive Pastry Chef to maintain and elevate pastry standards at all The Sicilian Butcher locations across the Texas and Tennessee region. You’ll support training efforts, assist in the rollout of new desserts, ensure prep consistency, and step in when needed to support pastry teams on-site.

Key Responsibilities:

  • Support regional pastry execution in collaboration with the Executive Pastry Chef
  • Assist with recipe development, plating standards, and seasonal rollouts
  • Travel to store openings and existing units to train pastry team members
  • Monitor quality, portion control, and consistency in all pastry items
  • Communicate pastry prep needs to Kitchen Managers and culinary leadership
  • Maintain all food safety, sanitation, and cleanliness standards in pastry operations
  • Provide hands-on support for special events, promotions, and holidays
  • Maintain inventory levels and assist with regional ordering as needed
