 AM Beverage Operations Captain 

The Whit | New Orleans, LA 

The Whit is seeking an AM Beverage Operations Captain to join our founding Food & Beverage team. This hands-on role is ideal for a beverage professional who thrives in a refined hospitality environment and takes pride in disciplined preparation, strong systems, and exceptional product knowledge. 

About The Whit 

The Whit is an intimate luxury hotel housed in a beautifully restored 19th-century mansion in the heart of New Orleans. With 15 guest rooms, a bar, cocktail salon, library, refined food and beverage, and elegant private events, The Whit offers a hospitality experience that feels more like staying in the home of an extraordinary host than a traditional hotel. 

About the Role 

As part of our founding Food & Beverage team, the AM Beverage Operations Captain will help establish and maintain the production systems, preparation standards, inventory controls, and training routines that support The Whit’s beverage program each day. 

This is a hands-on bartending and operational role focused on batching, beverage production, coffee service, inventory, receiving, prep pars, organization, documentation, and team training. 

What You’ll Do 

  • Execute daily and weekly cocktail batching according to approved recipes, yields, and production standards. 

  • Prepare syrups, juices, infusions, garnishes, specialty ingredients, and zero-proof beverage components. 

  • Prepare and serve espresso, cappuccino, latte, Americano, and other coffee beverages to established standards. 

  • Complete daily beverage production based on established pars and anticipated business levels. 

  • Maintain accurate batch records, labeling, dating, shelf life, and proper product rotation. 

  • Review product levels and communicate shortages, replenishment needs, and purchasing recommendations to Food & Beverage leadership. 

  • Receive beverage deliveries, verify quantities and condition, and ensure products are properly stored and organized. 

  • Conduct and review beverage inventories, cycle counts, and product-control procedures. 

  • Own beverage ordering and inventory accountability by conducting regular inventories, reviewing product levels, and ensuring timely replenishment based on established pars and operational needs. 

  • Track and document waste, spoilage, breakage, shortages, and product discrepancies. 

  • Maintain organized and fully stocked bar production, coffee, refrigeration, and beverage storage areas. 

  • Ensure batches, garnishes, mixers, coffee supplies, glassware, and service items are prepared to establish pars before PM service. 

  • Review PM shift notes and incorporate documented prep needs, 86s, and replenishment requests into production priorities. 

  • Provide a clear handoff to the PM Beverage Operations Captain regarding completed production, shortages, substitutions, and outstanding items. 

  • Lead ongoing beverage training for cocktails, wine, coffee, recipes, preparation methods, and established service standards. 

  • Reinforce recipe accuracy and consistency through hands-on coaching and practical training. 

  • Work with the PM Beverage Operations Captain and Food & Beverage leadership to refine pars, yields, storage systems, workflow, and beverage efficiency during the opening period. 

  • Support guest-facing beverage service and broader Food & Beverage operations as business needs require.

You’re a beverage professional who understands that exceptional service begins with disciplined preparation, strong systems, and exceptional product knowledge. You enjoy the precision of batching and production, take ownership of organization, and understand how inventory, pars, receiving, and preparation directly affect both the guest experience and beverage cost. 

You’re also comfortable teaching others. Whether demonstrating a cocktail specification, refining espresso technique, or helping the team understand a wine, you take an active role in building confidence and consistency across the beverage program. 

You work independently without operating in isolation, communicate clearly with the PM team and leadership, and take pride in leaving the operation fully prepared for service. 

Qualifications 

  • Previous craft cocktail, fine dining, luxury hotel, or high-touch hospitality experience. 

  • Strong knowledge of cocktails, spirits, wine, coffee, and beverage service. 

  • Experience with cocktail batching, beverage production, and high-volume prep strongly preferred. 

  • Experience with inventory, pars, receiving, product rotation, and ordering support preferred. 

  • Comfortable preparing espresso and milk-based coffee beverages. 

  • Previous experience training or developing bartenders strongly preferred. 

  • Exceptional organization, accuracy, and attention to detail. 

  • Strong communication skills with the ability to confidently teach beverage knowledge and technique. 

  • Ability to work independently, prioritize production needs, and maintain established operating standards. 

  • Morning, weekend, and holiday availability.
