Chef / Back of House Team Members - Recruiting for January 2024

Are you a dynamic and passionate hospitality professional ready to immerse yourself in the legacy of culinary icon Raymond Blanc? If so, we invite you to be a part of Heartwood Collection's newest concept and opening - our first and newest Pub with Rooms - The White Horse in Dorking

This marks a hugely exciting new chapter for our business and a big step forward for Heartwood Collection.

A significant refurbishment of this stunning 12th-century coaching inn is already underway and will reopen in the Spring of 2024 boasting 56 rooms, 108 dining covers, 40 bar covers with another 23 in private dining and a new 73-cover terrace.

Our newest opening is nestled in the heart of Dorking, it exudes a relaxed and inviting atmosphere, perfect for unwinding, enjoying good company and excellent food with wonderful rooms to stay

Heartwood Collection is already an award-winning collection of cosy pubs and atmospheric brasseries at the heart of their local communities serving great fresh, seasonal food. We are now expanding the concept into rooms. Our Brasserie Blancs, the French brasserie business inspired by Raymond Blanc and Heartwood Inns (Formally White Brasserie Company) are renowned for being a home-from-home. 

We're looking for fun and passionate people to join our fantastic  Chefs / Back of House Team Members team in a variety of roles:

  • Chef De Parties
  • Demi Chefs
  • Commis
  • Kitchen Porters

  • Desire to cook with fresh and seasonal ingredients to produce fabulous dishes
  • Able or willing to learn classical French cooking techniques
  • To be a real team player it is essential that you are flexible
  • Have great attention to detail and impeccable standards across the kitchen
  • Eager to develop themselves and their dishes with guidance from our Chefs

Heartwood Collection currently has 20 pubs and 14 Brasserie Blancs. We aim to grow to 61 sites by 2027 and include pubs with rooms.  This could add up to 500 bedrooms to The Collection in the next 4 years.  We hope you can be as excited as we are about the opportunities this will provide for you to take your next step and develop your career with us through our bespoke “Stepping Stones” training and development programme.

*Hourly rate is based on National Living Wage plus TRONC. The rate of TRONC for the site you are applying for will be confirmed and discussed at the interview stage.
