Description
“Great Seafood and Good Times”

At Wright Brothers, we’ve been sourcing and serving exceptional sustainable seafood for over 20 years. What started with our co-founders Ben Wright and Robin Hancock selling oysters has grown into the UK’s leading seafood supplier, Wright Brothers Wholesale, delivering premium seafood to over 500 restaurants across the country.
Today our story continues through our thriving restaurants and our online fishmonger, Wright Brothers at Home, bringing the same quality seafood direct to homes nationwide.
We are proud to operate three restaurants in some of London’s most iconic food destinations: Battersea Power Station, Borough Market and South Kensington.
At Wright Brothers it’s simple: work hard, be nice to people, and be kind to our planet. We believe the world truly is your oyster.

The Role
As Sous Chef, you’ll play a key leadership role in the kitchen — supporting the Head Chef in delivering exceptional food quality, maintaining operational standards, and leading a motivated and high-performing team.
Working closely with the Head Chef, you’ll help oversee the day-to-day running of the kitchen, ensuring every dish reflects the quality, consistency, and attention to detail that define the Wright Brothers experience. In the Head Chef’s absence, you’ll confidently lead the kitchen operation and support the team to deliver outstanding service.
You’ll combine strong culinary skills with leadership, organisation, and commercial awareness, helping drive both team performance and kitchen efficiency.

What You’ll Be Doing
  • Support the Head Chef in the day-to-day management of the kitchen operation
  • Lead and inspire the kitchen team to deliver consistently high standards during prep and service
  • Ensure all dishes meet company presentation, recipe, and quality standards
  • Train, coach, and support junior chefs to develop skills and maintain consistency
  • Maintain strong communication across the kitchen team to ensure smooth and efficient service
  • Monitor stock control, ordering, portioning, and waste management to support profitability
  • Support labour scheduling and rota planning in line with business needs
  • Ensure all food safety, HACCP, allergen, health & safety, and hygiene procedures are followed at all times
  • Oversee stocktakes, kitchen reporting, and operational administration as required
  • Support menu development, recipe implementation, and team training on new dishes and ingredients
  • Maintain high standards of cleanliness, organisation, and kitchen maintenance
  • Deputise for the Head Chef in their absence, taking full responsibility for kitchen operations
We’re passionate about knowledge and development – whether that’s understanding the story behind our seafood, the provenance of our wines, or the people who supply us.

The Type of Person We’re Looking For
You’re a confident and organised kitchen leader who thrives in a fast-paced environment. You know how to motivate a team, maintain high standards under pressure, and balance creativity with operational discipline.
You’ll likely have:
  • Previous experience as a Sous Chef in a high-quality kitchen environment
  • Strong leadership and people management skills
  • Excellent understanding of kitchen operations, food safety, and stock control
  • Experience managing service standards, labour, and kitchen organisation
  • Confidence leading a team during busy services
  • A passion for quality ingredients, seafood, and hospitality
  • Strong communication skills and a proactive, hands-on approach
While experience matters, it’s our people and culture that make Wright Brothers special. If our values resonate with you, we’d love to hear from you.

What You’ll Get
  • Staff meals on shift and unlimited coffee
  • Discounted food and drinks when dining in our restaurants
  • Hastee Pay – wage advances for when life gets in the way
  • Supplier trips and industry learning experiences
  • Discounted wine
  • And of course… a party or two

If you’re ready to be part of a passionate team, deliver unforgettable guest experiences, and grow with a business that truly cares about its people and its product, we’d love to hear from you.
