Description

Sommelier

Wright Brothers Covent Garden | New Opening

Be Part of Something New

As we prepare to open our new restaurant in Covent Garden, we're looking for a knowledgeable, engaging and passionate Sommelier to help shape our wine experience from day one.

This is an exciting opportunity to play a key role in the next chapter of Wright Brothers, bringing together our expertise in exceptional seafood with a carefully considered wine programme, thoughtful food pairings and a more elevated approach to hospitality. With a focus on quality, provenance and discovery, you'll help create a wine experience that complements our produce and gives guests something to remember.

We're looking for someone who takes real pride in their craft, loves sharing their knowledge and understands that great wine service is about more than what's in the glass. It's about understanding the guest, telling the stories behind the wines and making every recommendation feel personal, engaging and accessible. You'll have the opportunity to contribute ideas, develop your expertise and help build a wine offering that feels distinctive, yet unmistakably Wright Brothers in its warmth, character and love of great food and good times.

Our Story

For over 20 years, Wright Brothers has been passionate about sourcing and serving exceptional seafood. What began with our co-founders, Ben Wright and Robin Hancock, selling oysters has grown into Wright Brothers Wholesale, supplying more than 750 restaurants across the UK, a collection of much-loved London restaurants and Wright Brothers at Home, our online fishmonger.

In 2024, we established the Wright Brothers Sea Change Foundation to support projects that protect our oceans, promote sustainability and champion the coastal communities that depend on them.

Our philosophy is simple: work hard, be nice to people and be kind to our planet. We believe in great seafood, genuine hospitality and bringing good people together. We're passionate about understanding the provenance of what we serve, from the seafood we source to the wines we pour, and sharing that knowledge in a way that creates genuine connections with our guests.

The Role

At Wright Brothers, we believe great wine can transform a meal. As Sommelier at our new Covent Garden restaurant, you'll be our trusted expert in wine, helping guests discover bottles, regions and pairings that make their dining experience even more memorable.

Working as part of our wider bar team, you'll bring our carefully curated wine list to life through confident recommendations, thoughtful pairings and engaging, knowledgeable service. From elegant Champagnes and mineral-driven whites to exceptional Burgundies and distinctive coastal wines, you'll help make wine approachable, exciting and personal.

Alongside delivering outstanding guest experiences, you'll contribute to the development and commercial performance of our wine programme, supporting purchasing, stock control and margin management while helping the wider team grow in confidence and knowledge.

What You'll Do

  • Guide guests through our wine list, offering confident, personalised recommendations and thoughtful food pairings.
  • Deliver polished, engaging wine service that feels welcoming and approachable rather than formal.
  • Share your knowledge of international wines, with particular strength in Champagne, Burgundy, Chablis, the Loire Valley and other regions well suited to seafood.
  • Work closely with the kitchen and wider bar and front-of-house teams to create considered food and wine pairings.
  • Support purchasing, stock control and margin management, helping to maintain a high-quality and commercially successful wine programme.
  • Build relationships with producers and suppliers, staying curious about vintages, regions and emerging wine trends.
  • Contribute ideas to the wine list and help evolve our offering, bringing fresh perspectives and new discoveries to our guests.
  • Share your knowledge with the wider team, helping colleagues develop their confidence in wine recommendations and service.

What We're Looking For

  • 3–5 years' experience as a Sommelier or in a wine-focused role within a premium restaurant environment.
  • Strong knowledge of international wines, wine service and food pairing, ideally with a particular interest in seafood.
  • WSET Level 3 Award in Wines or equivalent wine knowledge desirable.
  • A natural ability to connect with guests, understand their preferences and introduce them to new discoveries.
  • Confidence in recommending wines and delivering thoughtful, engaging and approachable service.
  • Commercial awareness, including an understanding of wine sales, stock control, purchasing and margins.
  • The ability to share wine knowledge and build confidence across the wider team.
  • A collaborative, detail-oriented approach and a genuine passion for hospitality.

The Wright Benefits

  • An exciting, carefully curated wine portfolio in a premium seafood restaurant.
  • The opportunity to contribute to and develop our wine programme at an exciting new opening.
  • Staff meals on shift and unlimited coffee.
  • Discounted food and drinks when dining in our restaurants.
  • Hastee Pay, offering access to earned wages when you need them.
  • Employee referral scheme
  • Supplier trips and industry learning experiences.
  • Discounted wine.
  • And, of course, a party or two...
