Chef de Partie | Another Place - The Machrie | Kitchen

Offering a competitive salary, monthly tips, and an annual £2,598 Islay Living Allowance (paid monthly) for all off-site team.

Set within this captivating landscape lies Another Place – The Machrie. Originating from the Gaelic term ‘machair’, meaning ‘the linking stretch of land that joins the grassy dunes with the shoreline’, The Machrie offers elevated comforts and unforgettable experiences.

Our Chef de Partie role:

Across land, sea and air, Islay is brimming with fresh island produce – all coming together at The Courtyard and the hotel’s award-winning 18 Restaurant & Bar. From Loch Gruinart oysters, Islay scallops and Port Askaig lobster, to superb beef, lamb and game, and locally grown vegetables, our menus are as fresh as they come. Behind the bar, you’ll also find Islay whisky, gin, rum and an array of craft beers.

We’re looking for a talented, enthusiastic, and hardworking Chef de Partie to join our kitchen team at Another Place – The Machrie. Reporting to our Head Chef and Senior Sous Chef, you’ll be helping to craft innovative menus, and ensure top-notch food quality. 

This role provides a unique opportunity for career development in an ambitious and expanding organization, with excellent long-term career prospects, and is a salaried position based on a 45-hour working week.  
 
As our Chef de Partie you’ll be:

  • Assisting our Head Chef in the effective and efficient organisation and operation of the kitchen, supporting team to carry out allotted duties to our desired standards.
  • Carrying out the preparation, cooking and portioning of all food dishes, inclusive of staff meals, to our high consistent standards of quality and quantity.
  • Maintaining the appearance and functionality of our department, ensuring cleanliness and hygiene standards of the kitchen are met.
  • Compliant with instructions provided by your immediate supervisor.
  • Preparing for business in accordance with projected department needs.
  • Following schedules within the kitchen and completing daily check sheets and temperature logs.
  • Assisting colleagues in stocking up when necessary.
  • Ensuring the smooth running of all aspects of the kitchen and back of house areas.
  • Undertaking many crucial tasks associated with the preparation, storage and service of food.
  • Maintaining a high level of personal hygiene and cleanliness whilst in the workplace.
  • Maintaining an organised, clean and safe workplace, not only for yourself but also for those around.

You’ll also be:

  • Helping to ensure a safe environment for both staff and guests and following company Health and Safety policies and procedures.
  • Following preservation standards for the proper handling of all food products (stored at the correct temperature).
  • Following all Health and Safety guidelines.
  • Promoting our shared responsibility to look after our team and planet.

The skills you’ll be sharing with us:

  • Food Hygiene certificate
  • Responsibility, accountability, reliability
  • Flexible attitude to working hours and variable shift patterns
  • Good listening skills and a proactive, helpful attitude towards team members 
  • Interest and passion for the food industry
  • A broad knowledge of ingredients, with a particular passion for Scottish and locally sourced, sustainable foods (desirable)
  • NVQ level 1& 2 or equivalent as a minimum
  • Team player
  • Guest service focused
  • A cool head in a high-pressure kitchen environment 
  • An eagerness to develop and learn
  • A professional personal presentation with attention to personal care
  • A genuine care for our team and our wider community and environment

Additional experience you’ll need:

  • A valid driving licence and use of a personal vehicle.
  • Previous experience of island living, or equivalent (desirable).

On Islay, The Machrie embraces all-season island living. Due to the hotel’s remote location, you will require a valid driving license and access to a personal vehicle. We also offer team accommodation within same-sex residences (where possible).
