As we prepare for this next chapter, we are searching for a passionate and highly experienced General Manager to lead Sale e Pepe Mare from pre-opening to launch and beyond. The Role:

As General Manager, you will take full ownership of the pre-opening process, working closely with senior leadership to establish Sale e Pepe Mare as one of London’s most exciting new dining destinations. You will be responsible for delivering a seamless opening, leading a passionate team, and ensuring that every guest experience is exceptional.

Key Responsibilities:

Pre-Opening & Launch

  • Lead all pre-opening operations, including recruitment, training, system implementation, and operational setup.
  • Work closely with the Executive Team to shape the venue’s service style, culture, and guest experience.
  • Build a high-performing team, ensuring they are aligned with Sale e Pepe Mare’s ethos and standards.
  • Oversee supplier partnerships, procurement, and logistics to ensure a smooth opening.

Operational Excellence

  • Take full responsibility for the day-to-day operations, ensuring smooth service and an exceptional guest experience.
  • Drive sales, profitability, and efficiency, optimising revenue opportunities while maintaining cost control.
  • Maintain impeccable service standards, training and inspiring the team to exceed expectations.
  • Oversee compliance, health & safety, and licensing requirements, ensuring full adherence to regulations.

Guest Experience & Brand Leadership

  • Embody the Sale e Pepe hospitality ethos, ensuring that every guest feels valued and welcomed.
  • Build relationships with VIPs, regular guests, and industry partners, strengthening the brand’s reputation.
  • Collaborate with Marketing & Events teams to drive promotions, activations, and exclusive experiences.
  • Act as the face of the restaurant, ensuring a warm and engaging atmosphere.

What We’re Looking For:

  • Proven experience as a General Manager in a high-end, high-volume restaurant.
  • Pre-opening experience is a large bonus
  • Deep knowledge and passion for Italian cuisine, wines, and hospitality.
  • A strategic mindset, with experience driving revenue, managing budgets, and optimising operations.
  • A charismatic and hands-on leader, capable of inspiring and mentoring a large team.
  • Strong knowledge of restaurant technology, reservations, and reporting systems.
  • A natural host and relationship builder, with an ability to engage with high-profile guests and industry figures.
