Head Sommelier – Sale e Pepe Mare

For over 50 years, Sale e Pepe has been a cornerstone of refined Italian dining in London. Now, with the launch of Sale e Pepe Mare, we introduce a vibrant seafood-focused evolution, inspired by the coastal elegance of Italy. A new chapter begins - one where wine, food, and hospitality come together in perfect harmony.

We’re now seeking a Head Sommelier to lead our wine program and craft a world-class beverage experience that complements our exquisite cuisine.

The Role:
As Head Sommelier, you will curate and manage an exceptional wine list, showcasing Italian regions and complementing our seafood-focused menu. You’ll lead the wine service team, inspire guest experiences through expert pairing, and play a key role in the restaurant’s prestige and profitability.

Key Responsibilities:

  • Develop and maintain a comprehensive wine list focused on Italian coastal regions and fine international selections.
  • Deliver tableside wine service, offering expert pairings and personalised guest recommendations.
  • Lead, train, and mentor a small team of sommeliers and FOH staff on wine knowledge and service.
  • Manage inventory, supplier relationships, and wine cellar operations.
  • Drive wine sales and support overall beverage profitability.

What We’re Looking For:

  • Previous experience as Head Sommelier or Assistant Head Sommelier in a fine dining restaurant.
  • Deep knowledge of Italian wines, global wine regions and fine dining service.
  • WSET Level 3 or equivalent qualification is highly desirable.
  • Passionate communicator and educator with a guest-first mindset.
  • Strong organisational skills and attention to detail.
