The Role
We are seeking a highly experienced and strategic Operations Manager to oversee the performance, development, and future expansion of the Sale e Pepe brand. This is a senior leadership position within Thesleff Group, with responsibility for multiple sites, their General Managers, and the delivery of outstanding operational standards.

Reporting directly to the COO, you will ensure each venue meets its commercial, service, and brand objectives, while maintaining the group’s culture of excellence and hospitality.

Thesleff Group operates Los Mochis restaurants in Notting Hill & London City, the iconic Sale e Pepe in Knightsbridge, and the vibrant Viajante87 cocktail bar and lounge in Notting Hill. With private dining, exclusive celebrations, and corporate gatherings at the core of our brand, we aim to create unforgettable moments for every guest.

Our Sale e Pepe brand is an iconic name in Italian dining, known for its charm, authenticity, and consistently high standards. Following the success of our Knightsbridge institution and the upcoming launch of Sale e Pepe Mare, we are continuing to grow – with more exciting openings planned.

Key Responsibilities

• Lead, mentor, and support the General Managers of each site to achieve operational and financial targets.
• Drive brand consistency and service excellence across all Sale e Pepe locations.
• Monitor and analyse financial performance, implementing initiatives to maximise profitability.
• Ensure compliance with all licensing, health & safety, and food hygiene regulations.
• Lead talent development to build strong, high-performing teams.
• Work closely with senior leadership on strategic planning and expansion of the brand.
• Maintain close relationships with suppliers, partners, and the wider hospitality community.

About You

• Proven multi-site management experience within premium restaurants or hospitality groups.
• Strong pre-opening experience within a high end or luxury restaurant group.
• Strong commercial acumen with the ability to analyse data and implement improvements.
• Exceptional leadership skills with the ability to inspire and develop teams.
• A passion for hospitality, guest experience, and operational excellence.
• Flexible, resilient, and highly organised, with the ability to thrive in a fast-paced environment.
• Experience in launching or overseeing new openings.
