Sommelier – Sale e Pepe Mare

Sale e Pepe Mare is seeking an experienced and knowledgeable Sommelier to join our opening team in early 2026. As a key member of the service team, you will curate an exceptional wine experience for our guests, working closely with the Head Sommelier and floor team to deliver informed, engaging, and personalised recommendations. You will showcase both technical expertise and warm hospitality, ensuring that wine service enhances every dining occasion.

Key Responsibilities

  • Deliver exceptional wine service, providing confident, tailored recommendations to guests.
  • Support the creation, organisation, and maintenance of the wine list and cellar.
  • Guide and assist the floor team with wine knowledge, service techniques, and pairings.
  • Engage guests in an approachable, professional manner, enhancing their dining experience.
  • Conduct staff training sessions to ensure the team is confident in presenting and serving wines.
  • Work closely with the Head Sommelier, management, and kitchen team to create harmonious food and wine pairings.
  • Uphold the restaurant’s service standards, presentation, and cellar management procedures.

Requirements / Skills

  • Proven experience as a Sommelier in a premium, high-volume restaurant.
  • Advanced wine knowledge, ideally WSET Level 3 or higher (or equivalent).
  • Strong understanding of food and wine pairing.
  • Ability to communicate technical knowledge with charm, clarity, and passion.
  • Organised and detail-focused, with excellent cellar management skills.
  • Team player with a leadership mindset to inspire and educate colleagues.
  • Professional appearance and impeccable presentation standards.
  • A genuine passion for hospitality and creating memorable guest experiences.
