Junior Pastry Sous Chef – Sale e Pepe Mare

Sale e Pepe Mare is seeking a talented and motivated Junior Pastry Sous Chef to join our opening team in early 2026. You will support the Pastry Chef and Sous Chef in creating exceptional desserts and baked goods that complement our fine dining experience. Combining creativity, technical skill, and efficiency, you will help maintain the highest standards in the pastry kitchen while developing your expertise in a dynamic, high-volume environment.

Key Responsibilities

  • Assist the Pastry Chef and Sous Chef in preparing desserts, pastries, breads, and plated sweets to the highest standard.
  • Execute recipes with precision, consistency, and attention to detail.
  • Support mise en place, ensuring all ingredients and equipment are prepared and organised.
  • Help maintain cleanliness, hygiene, and organisation within the pastry kitchen.
  • Learn and develop technical skills in pastry production, plating, and dessert presentation.
  • Collaborate with the culinary team to create innovative seasonal desserts.
  • Assist with stock control, ingredient rotation, and waste management.
  • Uphold health, safety, and food hygiene standards at all times.

  • Previous experience in a pastry role within a premium, high-volume restaurant or hotel.
  • Basic technical knowledge of pastry techniques, desserts, and baked goods.
  • Passion for learning, creativity, and professional development.
  • Ability to work efficiently under pressure while maintaining high standards.
  • Strong teamwork and communication skills.
  • Professional appearance and commitment to kitchen hygiene and organisation.
  • Flexibility to work early mornings, weekends, and peak service hours.
