Job Summary: Assist the Restaurant General Manager (RGM) in the achievement of the store business goals (i.e. achievement of Sales, Food, Service, Cleanliness (FSC) and Profitability targets thru effective management of day-to-day operations; development of packaged programs promotional activities; and may be assigned for the training and development of other management team members: Supervisors, and Restaurant Front of the House Crew.
Key Responsibilities:
- Sales Target Achievement
- Assist the Restaurant General Manager (RGM) in achieving sales targets to support the sales strategy designed by the RGM.
- Assist in the effective implementation of the sales programs including support for business channels.
- Assist RGM in Sales Analysis.
- Provides inputs from Sales Profit Analysis Report (SPAR).
- Develop and recommend specific promotion activities for packaged programs to support sales building strategies/directions as defined by the RGM.
- Ensure proper implementation and evaluation of promotional activities for Packaged Programs
- Ensure effective implementation of in-store and out-of-store merchandising activities. Food, Service and Cleanliness Target Achievement
- Help the RGM in supporting the Food, Service, Cleanliness (FSC) culture in the store by leading the team in defining and implementing FSC initiatives and activities and by helping identify opportunities to balance FSC & Profit & Loss demands.
- Lead/manage store team for achievement of FSC goals thru effective operations, this includes proper and integrated execution of operations activities that ensures delivery of all FSC support requirements.
- Regular review and assessment of operations. Conduct Store FSC Audit. Work with Managers to identify problems and formulate action plans to address concerns.
- Achieve Customer Satisfaction Survey Result Targets (Qualtrics & Google rating)
- Monitor Supervisors to ensure that Service Systems and Crew support requirements are in place.
- Conduct regular review and assessment of the Product Quality, Food Safety, and Service Quality levels. Lead and coach management team to design Product/Food Safety, Service Quality & Cleanliness & Sanitation programs. Deploy activities and monitor effective implementation.
- Address all customer complaints immediately and record in the Manager Feedback Report the actions taken to resolve the complaints.
- Ensure food and beverage preparation and presentation are done according to Tim Ho Wan’s prescribed standards. ➢ Uphold service quality standards for the restaurant (greetings, suggestive selling (up- selling), friendliness, etc.
- Ensure effective operational implementation of New Product Standards, Procedures and Processes.
- Design an effective and efficient Building, Equipment & Facilities Maintenance Program to support FSC requirements and build brand.
- Preventive Maintenance Program development and implementation.
- Supplier coordination. Profit Target Achievement
- Help the RGM in creating a cost management orientation among the store team by leading them in defining cost management and operational efficiency improvement activities. Lead in the implementation of activities to improve store cost performance levels.
- Ensure achievement of variable cost targets in the areas of Food Cost & Paper Cost (FC/PC), operating expenses, utilities, Repairs & Maintenance (R&M) & Local Store Marketing (LSM). Oversee Supervisors to ensure achievement of Labor Cost targets.
- Prepare weekly work schedules for all service staff including part-timer.
- Keep employee rosters updated by making amendments for attendance (last minute medical leave, no show, part-timers reporting to work). • Design variable cost management strategy for approval by RGM. Monitor and evaluate implementation. People Management & Development • Crew
- Assist Restaurant General Manager (RGM) in crew sourcing, selection, and interview.
- Ensure all responsibilities and tasks of Restaurant Front of the House Crew are performed properly.
- Train/Certify crew, crew trainers and crew trainees. Assist RGM in Crew Assessments, performance appraisal documentation and submission. Conduct and follow-up crew meetings agreed action plans.
- Monitor consistent implementation of Code of Conduct (Employee Handbook) and all HR and Legal requirements and procedures.
- Manage effective management-crew communication, feedback, performance management, coaching, and discipline.
- Supervisors and Management Trainees
- Ensure all responsibilities and tasks of Restaurant Supervisors are performed properly.
- Train/Certify supervisor/s & management team trainees. Assist RGM in Manager Performance appraisal documentation. Assist the RGM in conducting management team meetings.
- Define and achieve P&L targets.
- Work with RM/s in defining strategies & improvement initiatives to achieve variable cost targets.
- Work with RM/s to ensure effective implementation of P&L improvement programs and activities.
- Define cost management and productivity improvement strategies for cost areas not directly supervised by RM/s.
- Handle restaurant business reviews and continuously seeks ways to improve P&L results. People Management & Development
- Source, select, interview, on-board/orient store team.
- Prepare the schedule of store team, ensure proper recording and timely submission of time and attendance for payroll and application of effective discipline as necessary.
- Lead restaurant team in creating an atmosphere that lives the organization’s core values.
- Ensure achievement of targeted competency levels.
- Prepare and implement Restaurant Succession Plan
- Audit effective implementation of Manager Training Systems
- Train and certify RM/s, Supervisor/s and Management Trainees
- Approve and ensure implementation of Individual Development Plans (IDPs)
- Achieve Management Team Effectiveness through:
- Effective communication and coordination among team members
- Maintaining and/or enhancing morale level among team
- Effective Performance Management
- Proper delegation of Key Result Areas (KRA) among Management Team members.
- Providing effective Management Team support in areas of restaurant structure, staffing and skills building.
- Operational Administration
- Ensure restaurant adherence to organization’s operating systems, policies, procedures and standards, i.e. Security, Safety, Office and other reportorial and administrative requirements.
- Work with RM/s in defining Safety and Security Programs. Conduct Safety and Security Audits.
- Ensure restaurant compliance with government requirements such as restaurant permits and licenses.
- Ensure Performance Management System (PMS), Effective Discipline and Employee Relations Programs’ effective administration/implementation.
- Ensure compliance on the following:
- Cash Management and Audits including availability of small change/loose change for the Cashier.
- Hygiene and Cleanliness including coordinating with suppliers/partners for maintenance, pest control, chemicals, and detergents.
- Supplies Ordering
- Operational Administration Assist the RGM in achieving Store Safety & Security Audit Result targets.
- Develop and recommend Store Safety Program.
- Identify, enable and supervise Teams Leaders for Fire Brigade, First Aid and other Employee & Workplace Safety Teams.
- Develop and recommend the store Security Program.
- Ensure proper implementation of store security programs including cash control system, information security, physical security and fixed asset management.
Job Requirements:- At least associate’s degree or related courses in Business, Management, or equivalent combination of education & experience.
- Demonstrated experience in managing others/teams preferably in food service industries.
- At least 2 years’ experience as a Team Leader in a food service or retail operations, or equivalent combination of education & experience.
