Sitting in a commanding position overlooking the sprawling Longsands Beach, the art deco style building has been completely renovated, offering 72 bedrooms and suites, a pub restaurant with 250 internal and 300 external covers, a fish and chip takeaway and an ice cream and coffee parlour, providing the ultimate seaside stay.

The Tynemouth Castle Inn is now looking to recruit a Head Fish Fryer.

We’re looking for an experienced Fish Fryer to setup, train and lead the team of Oswin’s – The all new fish and chip takeaway that is part of the venue. Working under the General Manager and Head Chef and alongside the Shop Manager, the Head Fryer will be responsible for the delivery of operations within Oswin’s, using all new equipment supplied by KFE.

Oswin’s is situated facing out to sea, in a separate unit designed to operate as a takeaway, and directly in front of the Inn’s extensive beer garden where customer will be able to sit and enjoy their fish and chips.

A successful Head Fryer candidate will be:

Someone with…

  • Minimum 2/3 years in a senior position within a busy Fish and Chip shop
  • Previous management of a team
  • Flair and enthusiasm for Fish and Chips
  • Able to setup and work to a brand standard as well as able to create, spec and accurately cost dishes for the menu
  • Good interpersonal skills with both the senior management of the Inn (General Manager, Head Chef) and team members across the business.
  • Level 3 Food Safety Certificate (or be prepared to complete before commencing role)
  • Stock management experience
  • HACCP experience
  • Willing to undergo training from the NFFF with the goal to be to receive accreditation
  • A desire to push to win awards in future years

 Head Fryer Duties

  • To help produce, monitor, and maintain consistent food standards and quality across all areas.
  • Reporting to the Head Chef and General Manager and directly accountable for the day-to-day running of the Fish and Chip Takeaway
  • Ordering, using nominated suppliers
  • Achieving budgeted costs for food and wastage
  • Menu development
  • Stock control
  • Team management and training
  • Daily briefings
