Description

Chef de Partie | Birmingham City Centre, B3 | £32,000 to £34,000 plus circa £4,000 tronc

What's in it for the successful Chef de Partie?

  • Salary of £32,000 to £34,000 per annum
  • Tronc of circa £4,000 per annum on top
  • 45 hours per week, permanent
  • 28 days holiday including bank holidays, rising by a day for every year of service
  • 5% contributory pension, plus Wagestream so you can draw your pay as you earn it
  • Staff meal on duty and staff discounts
  • Two distinct menus to learn and cook, day and evening
  • A Head Chef and Sous Chef in post, and a place in the opening brigade
  • Training that is properly funded and resourced by University College Birmingham
  • A group of sites to progress through, with the financial backing to make that realistic

We're recruiting a Chef de Partie for the opening brigade at Beyond, University College Birmingham's new restaurant in Birmingham City Centre, opening in December 2026. Beyond is a commercial kitchen run by a professional team, and this is a purely operational role with no teaching involved. During the day we run an all-day offer built around excellent coffee, and in the evening the kitchen moves to a serious dinner menu with a proper drinks offer alongside it. You'll run your own section across both menus, so the cooking changes through the day.

What are we looking for from Chef de Partie candidates?

  • Experience as a Chef de Partie, or a strong Commis ready to step up, in a fresh food kitchen
  • Able to run a section on your own through a full service
  • Comfortable learning and holding two different menus
  • Good on prep, mise en place and controlling wastage on your section
  • Sound on food safety, allergens and cleanliness
  • Reliable and on time, and someone the rest of the brigade can count on
  • Available across a seven day operation, including evenings and weekends

If this sounds like your next role, apply today with your CV and we'll be in touch.
