About the Opportunity
A Sushi Chef at Vandelay Hospitality Group plays an essential role in delivering the refined, high-quality sushi experience our guests expect. This position is responsible for preparing sushi with precision, creativity, and consistency, ensuring every dish reflects Vandelay’s standards for craftsmanship and presentation. Sushi Chefs bring deep product knowledge, strong technical skill, and a commitment to exceptional hospitality, helping create an atmosphere where every guest feels welcome, cared for, and genuinely valued.
Core Responsibilities
Prepare a full range of sushi offerings (including sashimi, nigiri, and maki rolls) with precision, consistency, and adherence to Vandelay’s culinary standards.
Fabricate and portion fish accurately, ensuring premium quality, freshness, and proper handling at all times.
Ensure all sushi dishes are crafted with the highest-quality ingredients and presented with exceptional attention to detail.
Maintain a clean, organized, and fully stocked sushi station throughout prep and service.
Adhere to all food safety, health, and sanitation guidelines, ensuring a pristine and compliant work environment.
Monitor product levels, assist with inventory management, and communicate ordering needs to maintain proper stock.
Collaborate closely with the kitchen team and leadership to support a seamless flow of service and proper pacing.
Participate in the creation and refinement of new menu items, specials, and seasonal offerings.
Engage with guests when appropriate, offering warm hospitality and sharing product knowledge with confidence and clarity.
Support daily opening, mid-shift, and closing responsibilities to ensure the station is properly prepared and maintained.
Attend food, wine, and team training opportunities to continue developing technical skills and culinary knowledge.
Requirements
Must be at least 18 years old
Minimum of 2+ years of professional sushi experience in a high-volume, upscale dining environment.
Extensive knowledge of sushi preparation, traditional techniques, product quality, and proper ingredient handling.
Strong knife skills with the ability to fabricate fish, portion accurately, and work with precision and speed.
High attention to detail with a commitment to maintaining exceptional standards of cleanliness, organization, and presentation
Positive attitude with a strong sense of responsibility, ownership, and professionalism.
Excellent communication and interpersonal skills, with the ability to engage warmly with both guests and team members.
Team-oriented mindset with the ability to collaborate effectively in a fast-paced culinary environment.
Flexibility to work varied shifts, including evenings, weekends, and holidays.
Punctuality, reliability, and a consistent work ethic are essential.
Must be at least 18 years old.
Food handler certification as required by state and local agencies.
Desire to continue growing technically and professionally within Vandelay’s culinary program.
