Viale dei Romani is a modern West Hollywood trattoria created by Casey Lane. Inspired first by trips to the mediterranean coasts, our seafood-driven cuisine highlights the principles of Italian cooking with broader Southern French and North African influences.
The menu draws from the rich and far reaching culinary history of the Kingdom of the Two Sicilies, and the Moorish impact on the southern European Coast. Highlights include wood-fired seafood, raw fish preparations, pasta, pizza, and the traditional chickpea crêpe Cecina served with falafel, crudo, and marinated local vegetables; as well as a world class bread program and pastries - with all offerings crafted in-house and by hand.

General Summary:



The bartender’s primary goal is to serve guests in a warm, accommodating, professional manner ensuring 100% guest satisfaction. The bartender must responsibly and intelligently serve guests as well as maintain an organized, efficient bar. This team member must provide a consistent level of service that meets the company standards and exceeds the expectations of the guests. He is also responsible for serving food and beverages to bar patrons. The bartender is responsible for selling, serving and presenting wine and cocktails to our guests. He or she is also responsible for providing efficient and friendly service to our wait staff. He must maintain the bar and keep it clean at all times. The bartender must ultimately uphold the values and mission statement of the Company while performing positional responsibilities and adhering to operational standards.



Primary Duties:



To uphold the Viale Dei Romani values and mission statement while performing positional responsibilities.
To adhere to company policy and procedures, as stated in the company Handbook.
To provide the highest quality service to all guests at all times, by instilling the company philosophy.
Communicate with the bar backs before, during and after service to ensure a seamless supply of products and glassware at the bar and removal of dirties and garbage from the bar as needed.
Inform Beverage Manager/Beverage Director overseeing the bars of lows and any 86’d items for beverage products and bar bases.
Check cocktail base pars daily and participate in requisition process from any other departments as needed to maintain freshness and quality of all cocktail ingredients.
Maintain accurate cash drawers throughout the shift with less than a $5 variance.
Work any bar on property as determined by the manager on duty.
Perform daily, weekly and monthly side work as indicated.
Oversee maintenance/cleanliness of all bar areas including all storage areas pertaining to the beverage teams department.
Point out any problems with bar equipment in a timely manner and work together towards a solution.
Periodically review beverage manual, menu and cocktail descriptions and maintain knowledge of all beverage offerings.
Attend as required, and as possible when elective, beverage training for FOH staff.
Suggest any ways to improve the flow of service, as opportunities arise.
Open and close as needed.
Help prepare for and perform inventories as required by Beverage Manager/Beverage Director or other managers as needed.
Greet guests with genuine friendliness.
Use eye contact, smile and thank the guest at all appropriate moments.
Be on watch for restaurant reviewers at all times.
Be on the watch for disruptive behavior from guests and report such behavior to management immediately.
Check that all beverage lists are current and are the most up-to-date.


Requirements:



Promotes teamwork with the hotel. Displays a pleasant and cheerful disposition. Able to communicate professionally and effectively with both guests and staff. Must maintain a high level of integrity. Is able to adapt in difficult situations, solve problems and make decisions when necessary. Able to demonstrate a high level of service delivery; do what is necessary to ensure guest satisfaction; deal with service failures and prioritize guest needs. Shows an eagerness and capacity to learn, Can be relied upon to complete tasks.



Education and Experience:



High School Diploma or equivalent
Minimum of 3 years experience bartending in a high volume, upscale establishment
Must be able to perform basic math functions.
Must be able to read, write and understand English.
Fine dining experience and spirit knowledge are preferred.
Provide a valid Food Handler Certificate


Other:



May be required to lift up to 75 lbs. occasionally.

Available to work late nights, weekends, holidays and long days as necessary.

Must be able to stand and or walk for long periods of time without sitting.
