Position Summary

The Sushi Chef at WAKUDA is a highly skilled, guest-facing culinary professional responsible for executing sushi and raw preparations at the highest level of quality, consistency, and presentation. This role is ideal for a chef who combines technical mastery of Japanese techniques with the confidence, composure, and presence required to perform in front of guests in a fine dining setting.

Beyond execution, the Sushi Chef is a steward of the brand—supporting culinary leadership, contributing to menu evolution, maintaining discipline around standards, and creating a dining experience that is precise, engaging, and memorable.

Core Responsibilities 
Sushi Craftsmanship & Execution

  • Execute sushi, sashimi, and related preparations with precision and consistency
  • Demonstrate expert knowledge of fish breakdown, treatment, storage, and utilization
  • Maintain exacting standards for knife work, rice preparation, portioning, and presentation
  • Uphold recipe integrity while contributing to menu development
  • Ensure quality, temperature, and visual refinement meet brand standards
Guest Experience & Counter Presence

  • Perform confidently in a highly guest-facing sushi counter environment
  • Engage guests with professionalism while maintaining execution focus
  • Coordinate with front-of-house teams on pacing, allergies, and special requests
  • Contribute to a seamless and elevated dining experience
Operational Discipline & Cost Awareness

  • Support ordering and management of premium ingredients, including imported products
  • Maintain accurate station inventory and mise en place
  • Minimize waste through disciplined prep and storage
  • Follow all written procedures with consistency
Leadership, Culture & Team Contribution

  • Lead by example with professionalism and discipline
  • Support training and development of junior team members
  • Provide constructive feedback and support positive team culture
  • Uphold standards for grooming, punctuality, and cleanliness
Sanitation, Safety & Compliance

  • Adhere to all food safety and sanitation standards
  • Maintain clean, organized workstations
  • Ensure proper knife handling and equipment use
  • Follow all company policies and health regulations
Qualifications & Experience

Required:

  • Culinary degree, diploma, or equivalent professional training
  • Demonstrated experience specializing in Japanese cuisine and sushi preparation
  • Strong technical proficiency in fish handling and knife skills
  • Ability to perform calmly in a guest-facing environment
  • Food Handler Certification required

Preferred:

  • Fine dining or luxury hospitality experience
  • Sushi counter or omakase exposure
  • Experience with premium Japanese ingredients
