Description
ROLE TITLE: Kitchen Team Member

ROLE PURPOSE
The Kitchen team member works as part of a team in a multi skilled environment. S(he) plays a pivotal role within Wasabi by ensuring our food is prepared, packaged and displayed to the highest possible standards, whilst complying with all quality checks and food safety control measures. S(he) contributes to the kitchen productivity by keeping the correct production pace to deliver all items on time and maintain the availability by time of day

KEY RESPONSIBILITIES
Food Preparation
• Prepare, pack and display food items following the brand standard guidelines
• Operate sushi making equipment following the brand standard guidelines
• Setup all workstations following the brand standard guidelines
• Keep pace during production and finish item list on time
• Actively communicate to the Team leader progress on the production item list
• Actively ask Team Leader to check quality of items before displaying in dining room
• Demonstrate teamwork by supporting coworkers to finish production on time
• Open, store and label food correctly following all DOH and Wasabi Standards
• Report ingredients that do not meet brand standard guidelines for quality to Team Leader
• Accurately report waste that may have resulted from food production, damaged or dropped on the floor to Team Leader
• Use scoops and scales to portion food following the brand standard guidelines
• Prepare food for the next day following brand standard guidelines
• Read deployment planner daily
• Keep up to date with menu, ingredients or changes in standards
• Set up relevant equipment and workstations following brand standard guidelines
Cleanliness
• Clean workstations using the correct tools and chemicals adhering to all Health & Food Safety Standards
• Dismantle and clean sushi production equipment following the brand standard guidelines
• Complete cleaning tasks in the cleaning schedule as directed by Team Leader following all Health & Food Safety Standards
Health & Food Safety
• Adhere to all Health & Safety policies and standards
• Adhere to all Food Safety policies and standards
• Adhere to all uniform standards in line with company policy
• Wear Personal Protective Equipment supplied by the company in line with all Health & Safety Policies
• Operate equipment supplied in line with the training and Health & Safety standards
• Check food temperatures and complete Food safety paperwork in line with the Food Safety Policy
• Clean food preparation areas using the 2-stage cleaning (wash and sanitize) method following Health & Safety Standards
• Produce food that adheres to all standards outlined in the Food Safety Policy
