Description
ROLE TITLE: Branch Manager

ROLE PURPOSE
The Branch Manager leads the management team in a Wasabi branch. (S)he is accountable for the smooth running of branch operations. (S)he will lead and inspire the branch team to create and deliver amazing customer service and food to the highest standard, whilst complying with all quality check and food safety control measures. (S)he sets the strategy for the branch to safeguard profit and grow sales

KEY RESPONSIBILITIES
Business Strategy
• Creates a quarterly business plan for all areas of the branch operation
• Ensures a succession plan is in place for the management team and team members
People Management
• Ensures a productive staff schedule is in place and in line with the labor budget
• Ensures vacation time is managed correctly and does not allow vacations to negatively impact business function
• Manages, motivates and monitors the management team and branch staff performance in accordance with company policies and procedures
• Promotes a culture of development by acting as a role model; coaching and developing the team to maximize everyone’s potential
• Ensures training and tools are provided to team members in a timely manner when new menus or changes go into effect
• Conducts performance reviews in line with company guidelines
• Conducts probation reviews on time in line with company guidelines
• Completes relevant paperwork and keeps people management information up to date
• Ensures all training and inductions are conducted on time and following company policy
• Conducts one to one meetings with the management team on a regular schedule
• Delegates tasks to the management team and follows up to validate and provide feedback
• Conducts HR related investigations/disciplinary actions; follows all HR policies
• Conducts recruitment for the branch as needed to maintain the smooth running of operations
• Reports on training and development weekly to Area Manager
Leading Others
• Ensures the shift is organized and set for success
• Ensures the deployment chart is completed daily and briefed to the team including updates related to marketing, menu & ingredients or changes in standards
• Ensures all team members adhere to uniform and grooming standards
• Ensures iAudits and Kitchen Logbook are completed; that appropriate corrective action is taken following all Health & Safety policies
• Ensures team member rest or meal breaks are allocated according to labor laws
• Is a role model for the team by adhering to all statutory laws and company policies
• Creates a positive environment by praising team members for a task well done
• Provides feedback to team members on areas that need improvement
Standards & Display
• Reviews the production to ensure it is set in line with forecast
• Ensures food availability is maintained throughout the day following brand standard guidelines
• Ensures all labels are accurate and in good repair; replaces as needed
• Ensures customer service that wows every time by following the Steps of Service
• Ensures the management team handles customer complaints swiftly and confidently
• Reviews customer complaints and takes appropriate action to avoid recurrence
• Reviews the latest Wasabi Way and creates an action plan based on the areas of opportunity
• Demonstrates teamwork by supporting the team in completing various tasks to deliver a great customer experience
• Is a brand ambassador by answering customer questions regarding our products and ingredients
• Ensures all hot & cold food production is completed following the brand standard guidelines and relevant food safety standards
• Ensures all hot & cold food is displayed following the brand standard guidelines
• Reviews product sales and adjusts production accordingly
• Ensures brand standards for quality are met for all food transferred to other branches
• Ensures timely delivery of all food transferred to other branches
Finance
• Ensures waste is recorded accurately
• Orders stock in line with sales forecast
• Reviews waste and acts when needed
• Ensures the team uses scoops and scales according to brand standard guidelines
• Ensures transfers are done correctly and timely
• Conducts stock counts following policies
• Reviews and investigates stock variances in line with policies
• Implements stock management action plan to mitigate variances
• Ensures the team is briefed on stock variances
• Reports on KPIs weekly to Area Manager
Health & Food Safety
• Ensures adherence to all Health & Safety policies and standards
• Ensures adherence to all Food Safety policies and standards
• Ensures cleanliness of workstations using the correct tools and chemicals adhering to Health & Food Safety Standards
• Ensures cleaning schedule is completed and addresses any areas of opportunity
• Ensures Personal Protective Equipment is supplied by the company in line with all Health & Safety Policies
• Conducts Risk Assessments and ensures areas of opportunity are addressed
• Ensures safety checks are completed in accordance with company standards and corrective action is taken when appropriate
• Identifies security issues and takes appropriate action to implement solutions where necessary
• Logs maintenance issues on iAudit; calls for service and follows up with vendors
• Ensures preventative maintenance of equipment is done correctly and timely
• Ensures NYC Dept of Health and brand standards for safety are met for all food transferred to other branches
