Bakery Production Manager, WatchHouse.
As Bakery Production Manager at WatchHouse, you'll drive the daily operations of our bakery—leading a skilled team, upholding exceptional product quality, and ensuring every item is delivered on time, in full, and to spec.
You’ll drive a high-performing team culture through effective leadership, recruitment, and training. Overseeing production, scheduling, stock, and fulfilment, you’ll ensure efficiency whilst maintaining the highest standards in food safety, hygiene, and compliance.
With an exciting bakery relocation underway, you’ll help shape our future—launching new products, optimising our space, and owning cost control, recipe documentation, and quality systems. This is a hands-on leadership role for someone who thrives on structure, standards, and team success.
Directly reports into (Line Manager): Head of Food.
Key Responsibilities:
Lead, manage, and develop the Bakery team—ensuring a positive, engaged, and high-performing culture through accountability, recruitment, onboarding, and ongoing training.
Oversee all bakery operations, including food production, scheduling, stock control, and order fulfilment—ensuring all products are delivered on time, in full, and to spec.
Maintain exceptional product quality and consistency, upholding recipes, specifications, and standards across all product lines while supporting successful new product development and launches.
Uphold food safety and health & safety compliance, managing daily hygiene practices, cleaning rotas, and use of Trail logs, while addressing maintenance issues promptly.
Ensure the bakery space is well-utilised and operationally efficient, keeping equipment in safe working order and workflows optimised.
Monitor and manage bakery cost controls, including labour, ingredients, and wastage, while supporting the implementation of cost-saving strategies.
Own all recipe documentation and compliance systems.
Key to this role:
4 years minimum experience within a professional bakery.
Proactive and solutions-focused, with strong initiative, problem-solving skills, and the ability to stay calm and adaptable in a fast-paced environment.
Inspiring leader and team motivator, capable of effectively leading, managing, and developing others while fostering a positive, accountable culture.
Operationally and commercially minded, with a sharp eye for efficiency, recipe costing, margin management, and continuous improvement.
Detail-driven and quality-focused, ensuring all products consistently meet exacting standards and specifications.
Strong communicator and collaborator, with excellent interpersonal skills and proficiency in Microsoft Office for clear, organised reporting and planning.
