POSITION
PURPOSE:
To assist the wine and sake team with providing support in sales and
organization of the department, ensuring the integrity of project and quality
standards to achieve guest satisfaction.
ESSENTIAL
FUNCTIONS AND BASIC DUTIES:
- Provide
friendly, courteous and
efficient service to all guests with making eye contact, smiling and
maintaining proper posture.
- Being knowledgeable about different types and
regions of wines and sake.
- Assist sommeliers, helping guest choose the
correct wine/sake for a meal and/or budget.
- Assures that
glassware is appropriately stocked as needed for service.
- Notifies
Head Sommelier of wines that are 86ed or low.
- Works
as a member of the sommelier team. Interacts with service team in a
positive manner. Assists others whenever needed.
- Set
up ice buckets in main dining and lounge areas for service.
- Assists
in maintaining proper par levels of cellar areas, storage, and bar with
our products.
- Assists receiver in receiving wine and sake
deliveries to appropriate areas within the restaurant.
- Assists in restocking cellar when needed before,
during, and end of service.
- Assists in restocking bars at the beginning and
end of dinner service.
- Sets
up and breaks down sake machines on designated days of week.
- Follow
proper time and attendance and uniform procedures.
- To
assist in inventory when requested by Head Sommelier

assist in maintaining wine list and cellar map with corrections and updates
as needed
