Description
We have an exceptional opportunity to join our wine team as Regional Head of Wine – Asia, leading the wine and sake programmes across our Zuma locations in Hong Kong, Thailand, and Japan.
You will be responsible for driving consistency, quality, and commercial performance across the region, while ensuring each location delivers a guest experience that reflects Zuma’s global standards and local relevance. If you bring deep expertise in wine, a strong understanding of premium hospitality, and the ability to operate across culturally diverse markets, this is a rare opportunity to shape and influence one of the most respected brands in the industry.
This role will involve travel across Hong Kong, Thailand, and Japan.
What you will do:
- Own and evolve the wine and sake strategy across all Zuma locations in Hong Kong, Thailand, and Japan, balancing global standards with local market relevance
- Drive commercial performance and guest experience through focused, high-impact beverage programmes
- Build and lead high-performing wine teams through structured training, development, and clear standards of execution
- Oversee regional inventory, cost control, and supplier performance, ensuring consistency, efficiency, and value across all markets
- Maintain accuracy and integrity across wine lists, POS, and inventory systems
- Develop and manage strategic relationships with key suppliers and distributors
- Partner with senior operational leadership to align beverage strategy with wider business goals
- Act as the regional point of accountability for wine operations, ensuring compliance, consistency, and a strong cultural alignment across all locations
What we look for:
- Exceptional wine knowledge, supported by advanced certifications (e.g. WSET Diploma or equivalent) or extensive industry experience
- Strong sake knowledge, or credible exposure to Japanese beverage culture
- Proven experience in a multi-site or regional role within premium or luxury hospitality
- Commercially astute, with a track record of driving revenue and managing costs effectively
- Strong leadership presence, with the ability to influence and develop teams across different cultures
- Highly organised, with the ability to operate across multiple markets and priorities
- Fluent in English
