As a Pastry Senior Sous Chef at Zuma, our desserts are a harmonious blend of artistry, precision, and innovation. You’ll be a key leader in ensuring the seamless operation of our pastry department, delivering exceptional quality and inspiring your team to achieve culinary excellence.

Zuma is a contemporary Japanese restaurant collection, inspired by the dynamic Izakaya dining style. This role will be based in Zuma Mykonos, a first-of-its-kind lifestyle destination. Featuring a sleek infinity-pool, lounge, restaurant and resident DJs, our vibrant seasonal location is a dynamic lifestyle concept that captures the essence of contemporary dining and entertainment making it the dining destination in Mykonos.

Main Duties
Your key responsibilities will include:

  • Lead the pastry team by delegating tasks effectively to maintain high operational and safety standards
  • Oversee food preparation, minimizing waste and ensuring the team is ready for each service period with sufficient mise en place
  • Plan orders for perishables and equipment based on estimated food consumption, ensuring smooth operations and optimal stock levels
  • Manage labour efficiently during shifts, balancing productivity with cost control
  • Address guest and team inquiries courteously, escalating unresolved issues to senior management when necessary
  • Train and mentor pastry chefs in techniques, recipes, and equipment use, fostering skill development and providing constructive feedback to the Head Pastry Chef
