What you’ll do:

  • Ensuring floor is stocked with wine glasses. If the restaurant is not stocked adequately, notify managers and collaborate on bringing up new stock.   
  • Updating bin locator and 86 list. Approval from Wine or Assist Wine Directors to make independent updates is required)
  • Assisting guests with wine selections (driving sales) 
  • Performing wine service for guests 
    • Pulling wine, presenting, pouring, and maintaining filled glasses 
    • Wine is not to be pulled without a chit 
  • Communicating details of a table’s wine with their respective server to ensure that there is continuity of wine service.  
  • Coordinating with Special Events Captains to assist Event clients with any additional items to enhance their experience, and with an understanding of the party’s F&B minimums 
  • Receive unused and unopened Event Order wines at the end of an event.  
    • Ensure that the amount of bottles remaining on the check + the unopened bottles = the total number of bottles initially given.  
    • Return these items to respective storage locations 
    • Open Event wines are either subbed in for BTG when applicable or stored securely in Wine Door #10 (Not left out on the sommelier station) 
  • If the Hourly Sommelier is not busy with wine during service, then they should help the floor in any way possible 
    • Running food/drinks, walking tables, clearing/resetting 
    • Check on Honorary Members throughout the building and try to further relationships with them.  
  • Receive and organize deliveries for wine (Wednesday/Friday) 
  • Maintenance, cleanliness and organization of wine storage locations; stocking wall and walk-in 
  • Confirming wine selections on Event Orders are stocked before service, are the correct temperature, and that any issues or outages are communicated to management prior to lineup. 

Preferred Qualifications:

  • Minimum of two years working at a fine dining establishment
  • TN TABC Certification
  • Food and wine knowledge
  • Frequently lifts/carries up to 50 lbs.
  • Strong oral and written communication skills
  • Ability to work nights, weekends, and holidays
  • Strong leadership qualities
  • Ability to thrive in a fast-paced environment and multitask
  • Attention to detail
  • Able to work flexible, sometimes long hours
  • Excellent customer service
