What you’ll do:
Responsible for inventory, storage and cleaning of equipment; in addition, cleanliness of the general special events storage area
Attends weekly Events meetings
Understands and can pull information from the event software Triple Seat
Builds relationships with special event vendors (i.e. rentals, A/V, valet)
Maintain a positive and professional approach with coworkers and guests
Adhere to grooming and appearance standards consistently
Printing menus & EOs (Event Orders)
Communicates and works with appropriate team members to ensure all BEO details are in place for upcoming events including purchase orders
Prepare the room for dining room appropriately to match the EO
Reset the dining rooms to standard setup and/or upcoming events setup
Maintain appearance and setup of all PDRs and report damages as they occur
Meets with the team day-of and conducts line-up to review details of upcoming event
On-site for all events and executes from start to finish
Consistent check of food and beverage quality
Responsible for making sure each event is rung up correctly according to the EO
Professionally deals with situations and people while utilizing conflict resolution skills
Protect establishment and patrons by adhering to sanitation, safety, and alcohol beverage control policies
Help patrons select food and beverages by presenting menu; offering cocktails; suggesting courses; explaining the chef's specialties; identifying appropriate wines; answering food preparation questions
Stay updated on current menu choices, specialties, and menu deviations, knowing if the kitchen staff is running out of any items, etc.
Transmit orders to bar and kitchen by recording patrons' choices; identifying patrons' special dietary needs and special requests
Keep kitchen staff informed by noting the timing of meal progression
Serve orders by picking up and delivering patrons' choices from bar and kitchen; delivering accompaniments and condiments from service bars
Maintain table setting by removing courses as completed; replenishing utensils; refilling water glasses; being alert to patron spills or other special needs
Properly open and pour wine at the tableside
Obtain revenues by totaling charges; issuing bill; accepting payment; delivering bill and payment to host; returning change or credit card and signature slip to patrons
Promptly address customer service issues and refer guests to management when necessary
Completes an event recap and submits to the Service Manager after each event is completed
Displays awareness and compliance with security, safety, emergency and energy procedures.
Plans the serving order and orchestrates its completion in a timely, quiet and courteous manner.
Use judgment and reasoning to cope with emergencies such as sudden illness, accident, or interrupted service.
Plan the work of others.
Supervises wait staff. Trains all set up and wait staff. Ensures that servers are trained appropriately before executing events.
Perform a variety of activities, changing activities frequently and sometimes without notice.
Fill in for absent staff as needed
Preferred Qualifications:
Minimum of two years working at a fine dining establishment as a lead server or Captain
Experience with food production for large catering or banquet functions
Proficient in Microsoft Office
TN TABC Certification
Passion for food and cooking techniques
Food and wine knowledge
Ability to speak and read EO’s in English.
Frequently lifts/carries up to 50 lbs.
Strong oral and written communication skills
Ability to work nights, weekends, and holidays
Strong leadership qualities
Ability to thrive in a fast-paced environment and multitask
Attention to detail
Able to work flexible, sometimes long hours
Excellent customer service
