Harts Group is delighted to announce a new Barrafina, Parrillan, Parrillan Terrace and a brand-new concept Bar Daskal. The restaurants and bar will open in early 2022 at an ambitious new cultural and retail development in Brough Yards.


We’re looking for a General Manager seeking an exciting new challenge. The General Manager will lead our front of house teams with an engaging energy, coaching with expert knowledge of our menus and bar offerings and strive to be recognised for outstanding service. They will work under the direction of Aurelija Sovaite, Barrafina Operations Manager.


Barrafina Borough Yards, like the existing Barrafinas, will have counter-top dining at a marble bar, where guests can sit and watch the chefs at work. The atmosphere is convivial and sociable and the food world renowned. Our Soho Barrafina has held a Michelin star since 2014 and all Barrafinas have received glowing reviews from the UK’s restaurant critics.


Parrillan is a grill restaurant, with menus championing the finest seasonal Spanish and British produce. The chefs will cook over wood-fired grills and bespoke wood ovens. The Parrillan Terrace will follow the format of Parrillan Coal Drops Yard, with guests grilling their own ingredients on tabletop mini charcoal ‘parrillas’ or grills in a lively al fresco environment.


The new Bar Daskal will be a Spanish wine and sherry bar, offering cold tapas.


The General Manager for Harts Group at Borough Yards will be responsible for the smooth and efficient operations of the front of house teams of Barrafina, Parrillan and Bar Daskal, working alongside the Restaurant Managers during service, with a hands-on approach. The four brands will sit under one roof and will have a total of 220 covers.


The Role


·       Experience of a multi-revenue stream business or multi-site management

·       Management of quality lead, high volume restaurants minimum £100k per week turnover

·       Proven track record of inspiring and motivating a large team

·       You will ensure that the 4 brands work as one single entity and support each other in delivering exceptional guest experiences.

·       Maximise revenue by controlling the flow of customers and table management

·       Full control of site maintenance and reporting

·       Commitment to team training and development

·       Ensure the restaurant is impeccably presented and maintained to a high standard

·       Experience organising team rotas (team of 90) and legislative reporting

·       Strong understanding of recruitment, selection, and retention

·       Able to control wage percentage in line with targets

·       Good understanding of wastage, stock management, costings, and GP ultimately responsible for the financial performance of the businesses

·       Managing and exceeding guest expectations at all time

·       Ensure exceptional quality food and drink is consistently delivered

·       Be the face of the brand known for its’ warm welcome and guest care

·       Design and hold inspiring and informative briefings

·       Responsible for a safe opening and closing of the restaurant

·       Excellent knowledge of our menus, ingredients, and allergens

·       Strong command of English language

·       Adherence to all Food Safety and hygiene standards

·       Strong team ethic showing respect for your colleagues
