Group Beverage Manager


Reporting into the Chief Operating Officer, the Group Beverage Manager will provide technical/specialist support and advice to all Bill’s restaurants and co-ordinate/control all bar associated activities in relation to new openings and existing sites.  

An exciting, multi-facited role, key responsibilities include: 

Stock Management

  • Build and carry out maintenance on stock ordering and FOH till systems
  • Ensure a true and accurate figure is represented in beverage reporting
  • Set up stock ordering procedures in new restaurants

 

Bar design

  • Work closely with the Project Manager during the design process to ensure all beverage areas fully meet the requirements.
  • React to areas of good or bad practice/lessons learnt to help evolve/inform the designs

 

Menu content & layout design

  • Responsible for the design and development of all signature beverage items in line with The Ivy Collection concept
  • Ensure standards of generic beverage items are maintained across all sites
  • Design & develop wine lists in line with supplier constraints & Bill’s Concept.
  • Check all menus before going to print.

 

Development & recruitment

  • To facilitate the recruitment of bar managers and support the recruitment of the bar team
  • To initiate training and development of the existing bar team

 

Training

  • Identify and facilitate areas for training during the pre-opening period and ongoing training in existing restaurants. (Comtrex, beverage presentations, drinks manuals, on site organisation, ongoing wine, coffee & spirits training, off site trips & tastings).
  • Communicate & facilitate systems in place for menu changes, till changes.
  • Work with the marketing team on new initiatives.

 

 Existing sites

  • Responsible for all beverage menu changes
  • Develop existing beverage content by analysing sales & listening to feedback from GMs’ & Bar Managers
  • Support and action changes to hardware
  • Support bar managers with recruitment
  • Provide specs for all generic Bill’s drinks
  • Communicate & facilitate any special training with suppliers & site
  • Help investigate stock discrepancies
  • Make regular visits to sites to provide support and assistance

 

Suppliers

  • Set up & negotiate new contracts with suppliers
  • Build & maintain relationships with wholesale suppliers
  • Negotiate retro payments with suppliers

 

Health & Safety

  • Support standards of health & safety in line with food standards agency.
  • Support the bar managers in ensuring checklists & due diligence is carried out in new & existing restaurants
