Lead our dynamic Kitchen team at Brighton’s newest dining pub — a stylish yet relaxed spot loved by locals, foodies, families, and weekend socialisers. From leading the pass to delivering exceptional dishes with flair and consistency, you’ll help create the dining experience that makes our venue stand out. With vibrant weekends, cosy weekday service, and a supportive brigade, it’s the perfect place to grow your culinary leadership and shape a kitchen you can be proud of.

Key Responsibilities 

Lead the kitchen to deliver consistently high-quality food, ensuring standards, presentation, and seasonality remain at the forefront.

Oversee day-to-day kitchen operations including team coordination, menu knowledge, ordering, stock control, and financial performance.

Develop, train, and motivate the kitchen team, creating a positive culture focused on learning, progression, and exceptional standards.

Maintain full compliance with all health & safety, food hygiene, HACCP, and fire safety procedures, ensuring records and audits are up to date.

Control food costs, GP, stock levels, and purchasing through accurate weekly stock takes, menu costings, and rotational planning.

Collaborate closely with the GM and senior leadership to deliver business targets, review feedback, and continuously improve guest satisfaction.

Ensure the kitchen environment, equipment, and team presentation meet company expectations, legal requirements, and operational standards.

Work closely with the FOH, Bar & Sales teams to ensure a top-notch customer journey from start to finish
