Zan Kaufman started Bleecker in 2012 as a food truck. Today we have 8 sites and one delivery kitchen in London. We stand for The Best Burgers In An Equal World.

THE ROLE
Reporting into the Operations Director, as a leader at Bleecker you will oversee 4-6 Bleecker sites. You empower teams to produce unbelievable food and service for our customers. You ensure the teams have a clear vision of Bleecker, and that they are delivering this vision to our customers. Bleecker at its core is about commitment to the burger and diversity and inclusion; these core values always need to stay at the forefront of everything you do. 

RESPONSIBILITIES 

People

  • Be an ambassador for the Bleecker Values: United, Passionate, Empowering & Diverse.
  • Recognise and celebrate success in your teams while empowering GMs to unite their teams. 
  • Effectively communicate and drive teamwork within each site and across all Bleecker sites. 
  •  Oversee the training of teams in your area utilising company training materials. Spot talent, encourage succession planning and deploy training and development resources. 
  • Participate in appraisals and performance management of General Managers. 
  • Hold monthly team meetings ensuring information is cascading down through the team and everyone is aware of the current performance/targets of their site.
  • Adhere to all Bleecker HR policies and address any ER situations following advice from the People team. 
Operations
  • Your role should primarily be hands-on, spending a high percentage of your time in the sites, training and supporting teams. 
  • You will carry out audits to review standards; communicate results to the team in a positive fashion to foster a culture of continuous improvement. 
  • Keep yourself fully aware of standards and products and ensure any changes or issues are communicated to the relevant people.
  • Manage your time effectively; visit sites regularly according to priorities.
  • Empower your teams to exceed customer expectations.
  • Maintaining the highest standards must be the priority in everything you do. 
Financial
  • Act like a business owner with a focused approach to driving sales whilst being fully aware of costs, profits, resources, and all other commercial aspects.Ensure all sites are aware of financial policies and procedures.
  • Have full accountability for the control of all stock within your area ensuring that products are always available, stock control procedures are strictly followed and COGS targets are achieved.
  • Have full and detailed knowledge of EPOS and be able to fully utilize its functions.
  • Ensure all stock control systems are in place – e.g., the recording of all food wastage and team food into F&B and review of line checks.
  • Check weekly stock takes carefully ensuring they are fully accurate, investigate variances and review all finance KPIs with each GM every week. Ensure management & team schedules are prepared on time, that the sites are appropriately and efficiently staffed at all times and labour targets are met. 
Delivery
  • Drive performance of delivery sales channel for all sites in the area.
  • Monitor Deliveroo ratings weekly.
  • Create a culture that “Busy Mode Status” is only for exceptional emergency use.
  • Utilise all delivery partner reports to drive revenue growth through “Perfect Stats”. 
Events & Collabs
  • Logistics management for events & collaborations.
  • Liaise with marketing, finance and ops to ensure events run smoothly.

Health and Safety
  • Accountable for the standards of safety & hygiene (as detailed by the law), COSHH and Food Alert guidelines. 
  • Adhere to safety & hygiene standards set out by Deliveroo at the Edition Sites.
  • Ensure all equipment & services are in good working order including overseeing all maintenance management.
  • Always prioritise the safety of our customers and team.
  • Communicate major incidents to Head of Departments.
  • Liaise with delivery partners site manager & internal maintenance team on maintenance issues.
  • Carry out monthly internal audits.
  • Report all accidents and incidents to the appropriate channels.
  • Keep allergen data up to date and accurate.
  • Address issues raised by EHO’s, Fire Safety Officers, Health & Safety Officers, Food Alert and/or Delivery Partners.

EXPERIENCE
  • Minimum 2 years in a multi-site or area operations role.
  • QSR experience desirable; open to broader hospitality.
  • Experience leading and developing General Managers or senior leaders.
  • Strong P&L, labour and cost control understanding.
  • Proven track record in high-volume, multi-site environments.
  • Confident in recruitment, performance management and succession planning.
  • Comfortable working hands-on across sites, including evenings and weekends.
THE PACKAGE
  • 55K to 60K
  • Half Yerly Bonus allowance linked to sites’ KPIs.
