Position: Senior Sous Chef – New Opening

Location: Manchester

Salary: Up to £47,000 inclusive of tronc

As Senior Sous Chef you’ll work closely with the Head Chef to bring our bold Japanese-Peruvian fusion menu to life, ensuring consistency, creativity, and excellence in every dish. Experience in high-end, fast-paced environments and a passion for Asian or Nikkei cuisine is highly desirable.

Key Responsibilities as a Senior Sous Chef:

·       Support the Head Chef in overseeing all kitchen operations, ensuring smooth service during high-volume shifts.

·       Lead, mentor, and train kitchen staff to maintain consistency, efficiency, and high culinary standards.

·       Uphold and enforce strict hygiene, food safety, and cleanliness standards in line with company and regulatory guidelines.

·       Assist in menu development, contributing to the evolution of our Japanese-Peruvian fusion offerings.

·       Monitor stock levels, control costs, and ensure accurate ordering and waste management.

Requirements:

·       Proven experience as a Sous Chef or Senior Sous Chef in a high-volume, high-end kitchen environment.

·       Strong leadership skills with the ability to train, inspire, and manage a diverse kitchen team.

·       In-depth knowledge of food safety, hygiene regulations, and kitchen best practices.

·       Passion for Asian cuisine — experience with Japanese, Peruvian, or fusion styles is a strong advantage.

·       Excellent organizational and communication skills, with the ability to manage stock, costs, and kitchen operations efficiently.
