We’re on the lookout for an experienced and visionary General Manager to lead our flagship restaurant, Chotto Matte Soho. This is a unique opportunity to join a global brand and play a pivotal role in driving business success, team development, and unforgettable guest experiences.

Role Overview

As General Manager, you will have full accountability for the day-to-day operations, commercial performance, team leadership, and guest satisfaction of the venue. You’ll lead from the front, inspiring your management team and front & back-of-house staff to uphold the highest standards, ensuring the restaurant operates efficiently, profitably, and with unmatched energy and style.

As General Manager you’ll also work closely with the Head Chef to ensure seamless kitchen coordination and consistently high food standards that reflect the quality and creativity of the Chotto Matte brand.

Key Responsibilities

  • Deliver annual Sales, Labour, Margin, and Profit budgets with strategic foresight
  • Ensure a world-class guest experience is consistently delivered
  • Build, lead and develop a high-performing management and service team through effective recruitment, training, and coaching
  • Lead and inspire a positive and energetic working environment that reflects the Chotto Matte brand
  • Partner closely with the Head Chef to maintain seamless FOH & BOH collaboration and service delivery
  • Drive service standards, innovation, and consistency through daily briefs, coaching, and performance management
  • Manage atmosphere, ensuring music, lighting, and energy levels align with brand identity
  • Maintain full compliance with H&S, Licensing, Fire Safety, COSHH, Allergens, and Food Safety regulations
  • Regularly review competitor activity and hospitality trends to ensure Chotto Matte remains ahead of the curve
  • Work closely with the Support Office to create and implement sales-driving initiatives and marketing campaigns
  • Act as a brand ambassador both inside and outside the venue

Requirements

  • A minimum of 3 years of experience as a General Manager in a high-volume, premium hospitality environment
  • Proven track record of delivering strong commercial results and managing large teams
  • A natural and confident leader who thrives in a fast-paced, dynamic setting
  • Strong business acumen with experience managing budgets, KPIs, and cost controls
  • Exceptionally high standards when it comes to service, guest experience, and team development
  • Highly adaptable, able to manage change, and always focused on continuous improvement
  • Passionate about food, drink, and creating unforgettable guest moments
  • Familiar with maintaining and exceeding brand standards, particularly in high-profile or luxury dining settings
