Dish / Prep Steward 

Classification: Hourly / Non-Exempt 

Typical Experience: Entry Level 

Reports To: Prep Supervisor or Sous Chef 

Primary Focus: Support the kitchen through dishwashing, sanitation, trash removal, receiving, stocking, and basic prep support. 

Core Responsibilities: 

  • Responsible for the cleanliness and sanitation of plateware, silverware, utensils, tools, pots, and pans 

  • Takes out garbage and trash to dumpster area 

  • Washes work areas, refrigerators, cooking and washing equipment, walls, and floors 

  • Assembles and breaks down dish machines daily 

  • Receives orders and puts them away using FIFO 

  • Performs minor food preparation tasks 

  • Monitors dish chemical levels and communicates when low or malfunctioning 

  • Checks and clears floor drains daily; keeps area safe and dry 

  • Organizes equipment and plateware in proper storage areas 

Growth Path: Dish / Prep Steward → Cook 1 / Commis or Prep Cook 

To move into the next role, the employee should: 

  • Demonstrate strong attendance and dependability 

  • Keep the work area clean and organized without constant direction 

  • Show urgency and teamwork during busy periods 

  • Learn basic prep, labeling, food safety, and receiving procedures 

  • Show readiness to cross-train into prep or line support 

Evaluation Focus:
